  • microwave muffins?

    I am sure some one told me a recipe for microwave muffins...
    any ideas anyone?

    Muffin in a Minute

    Serving Size: 1

    1/4 cup flax meal (8.09 total carbs, 7.6 fiber) (30 g)
    1/2 teaspoon baking powder (0.64 net carbs)
    1 packet splenda packet (0.9 net carbs)
    1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
    1 large egg (0.6 net carbs)
    1 teaspoon butter

    (total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

    Put the dry ingredients in a coffee mug.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat.

    Set the mug to soak.

    Cream cheese would go nicely, too.

    The shape of this can be changed by making it in a bowl.

    It can be "toasted" once it's cooked.

    The cinnamon can be replaced.

      They are truly awesome...I make them with the Torani sugar-free vanilla bean syrup instead of the splenda and cinnamon...

        There's a million recipes. I am currently having this for either breakfast or dinner. VERY filling.

        3 oz softened cream cheese
        3 tsp pumpkin
        1 tsp flaxmeal
        splash vanilla
        3 splendas (this will be your whole allotment for the day!)
        1 egg
        healthy dash of cinnamon

        I am also planning on replacing the pumpkin for berries when the time comes. I think it's gonna be even yummier! NOM NOM NOM.

        nuke for 2-3 mins. You can eat it piping hot or put in the fridge for a cheesecake-like concoction.

          there is the mock danish too

          one egg
          1-2 ounces of cream chese
          spices of choice ( cinnamon is the one I used)
          1 serving of your chosen sweetner
          1-2 T ground flax seeds optional for a more bread like texture

          add all ingredients to a coffee mug or bowl and nke for 1 min.

          the cream cheses will melt but not all mix with the eggs so it will be like a cream cheese dansih.

          if you want to you can mix some of the cinnamon and sweetner together before you add it to your mixture and reserve a little and then after it cooks top the danish with it.

            flax is pure carb correct? fibre carbs though?

              there is fat protein and carbs in flax as there is in any seed. The amount of carbs left after the fiber is removed is small less then 1 net gram for 2T of flax seED MEAL per the USDA

                No. As noted in the recipe above, 30 grams (1/4 cup) is 8.09 total carbs, 7.6 fiber. That's .49 net carbs.
