The bake mix IS 3 net carbs, because we subtract the 5 carbs of fiber. It is legal -- and scientifically sound -- to subtract fiber from the total count. Fiber is indigestible, so the "carbs" in it actually don't count. (In reality, to call them carbs is a misnomer. We categorize food as protein, fat, and carbs. To determine the carb count, fat and protein are subtracted and what is left is deemed to be carbs -- even if indigestible. It would make far more sense if we just declared fiber as the fourth category, and didn't count it in with the carbs, at all.)
Sorry I confused you with the sugar alcohols. Just remember that when a product is labeled sugar free, but the ingredients list maltitol, lactitol, sorbitol, etc., you really should avoid their use.
