Has anyone tried making faux mashed potatoes out of cauliflower? I was just curious how it tasted and what the texture was like.

I thought I posted this once but I don't see it. (beginner's oops, if it shows up twice)
I love it! My oldest daughters like it more than mashed potatoes. I add garlic to mine.
Just make sure to drain/strain it really well. I use a salad spinner. It's watery if you don't. But if that happens, just add cheese and it's a great soup.

i've had them a few times, they are like sweet lumpy mashed potatoes with cheese on top. but if you didn't want to go through the trouble of mashing them you could just boil and then put a cheese sauce over them too.

No they don't taste like mashed potatos...they aren't potatos! Just enjoy them for what they are.
I love mashed cauliflower...I like to add a tiny bit of cream (it doesn't absorb stuff like spuds do so if you add too much cream it just gets drippy) and some grated cheese and lots of pepper!

It tastes like cauliflower. If you have a high powered blender or food processor, though, it will definitely blend to a mashed-potato-like consistency. Like the others said, just make sure to drain really well first, then after blending, add sour cream or mayo. Or even a little bit of cream cheese. Yum!

I couldn't live without them. I prepare them using the one-pound bags of frozen cauliflower to make it as no-nonsense as possible. After boiling for 30 minutes, I drain the cauliflower thoroughly, and transfer to a large bowl with the fixins already there and waiting: sour cream, butter, & a 3-ounce block of cream cheese. Then I top with minced onion, minced garlic, pepper - and yes, I put it all away!

I love them too. I put all the fixins on them as well.
I think I also read somewhere that you could grate uncooked cauliflower, then cook it for a faux rice. I'm going to try that sometime soon! (Someone correct me if I'm wrong.)~Brandi

I've done the faux rice as well, and it's really good. You don't want to cook it too much though...it's a fine line between being done just right, and being mush.
Again, the cauliflower doesn't absorb anything so you want to keep whatever you're adding to it to a minimum.
What I also like to do is to grate cauliflower, then blanch it for a short time, drain it really well and make a salad out of it.
You chop up some red onion, peppers, cucumber and put a greek dressing on it all, and it's really good. Use your imagination!

We do ours with butter, cream cheese, cheddar and bacon bits/pieces. Yummy!
Be sure to cook the cauliflower long enough so that it can be mashed easily. Otherwise, you could beat it forever and still get a lumpy texture.
Our 10 year old dd likes it okay, but dh and I fight over it! LOL

Moochie... Call me a cooking dummy, but what is blanching? I've heard of it, just don't know what it is. I've always been just a really basic cook. That's one thing I love about this WOE, I'm always trying new foods and recipes.
