    Oh I love the faux rice too! I don't blanch it(which, Tiggerdagibit, is to drop into boiling water for only a minute or so, then strain) but do it in the microwave for about a minute. It really has to be crunchy to be similar to rice.

      Oh yumm! Mashed cauliflower!
      From Dana Carpenders Book
      add some heavy cream to the water when you boil it. I "mash" it in the food processor. And add 4 oz cream cheese! I prefer this to mashed potato any day!
      But yeah, drain it well or it is runny.
