    Re: OMG....Shiritaki Noodles!

I think that you can buy them at Konjac.com, but I have never purchased from them, because it would cost too much to ship to Canada. I originally was going to buy online, but found them in two Asian stores in my area (after visiting 4 Asian stores). You should be able to find them in the refridgerator case in these stores. They look like spaggetti floating in water in a plastic bag or sometimes they look like spaggetti tied in little bundles (I just untie the bundles). Sometimes they are called yam noodle (although it's nothing like the starchy yam we are used to) or konjac noodles, or glucomannon noodles, or konnyaku or shirataki. I know it's confusing, but you should be able to recognize them by the appearance. Check the ingredients if they are in English and make sure they only list yam flour, water and either calcium carbonate or hydrated lime. They should have an extremely low carb count. I have paid anywhere from 50 cents to 2.00 dollars for a 150 gram package.

Hope this helps, I love them.

Sorry about the Asian markets Rikki. I think that one of the reasons its so expensive to ship them is because they are packed in liquid and heavy.

Hi Rikki, this might help. I found the website konjacfoods.com they sell them for 35.00 dollars for a box of 20, and charge 8.00 shipping, so that works out to a little over 2.00 a package. They have different shapes, but I have heard that most people like the angel hair pasta or spagetti and find the larger noodles to be too chewy.

ahh, that makes sense about the shipping... I found that site too... I wonder if they are trustworthy. I worry sometimes about sites that aren't well known...

                  Re: OMG....Shiritaki Noodles!

okay let me make this an easy analogy for everybody.

Milk is not allowed on Atkins right? yet when milk is treated with a chemical to become aged cheese it is allowed. Technically it is milk but it isn't. everybody following?

the konjac ( yam bean) root has 87% water in it and when the water is removed only the starches and fiber remain. the startch is removed much like psyllium is make. What is left is that stuff called glucomannan a soluble fiber and when mixed with water makes that gelatinous stuff called shiratiki noodles. just as Naja has made psyllium recipes and Not2late has make flax chip recipes for us to use as induction acceptable fiber sources shitatiaki noodles are another induction acceptable source of fiber and I have never seen any inductee posting they didn't need bowel assistance with fiber either forconstipation or the runs. Should you be rare inductee with no bowel issues then technically you can't have them just as technically you can have any flax stuff either.

However the email from Dr Atkins staff to our Asian member askingthe question did not distingush that fact just yes they were fine for induction.

Basically they are little or zero calories because they are all fiber (nothing absorbed into the body, nothing to burn). The calories come into play with the sauce that you add.

well actually itwould be more accurate to say they are all water 96% of that noodle is water and 4% is the fiber.

OK...I couldn't find Shiritake Noodles at our local Oriental Grocery Store, but I did find some kind of refrigerated soy noodle that is only 3g of carbs with 3g of fiber for net carbs of O!!! There are 180 calories per serving. I don't know what they're called really. I think they are just "Soy Noodles."

Since there are no carbs, I imagine these would be alright, no?
