    It was my birthday yesterday and because I felt so left out at christmas what with all the naughty food my boyfriend ordered a cake from sugarfreesuperstore.com and although it was small and pricey it was sooo nice! We got the coconut flavour and it was filling and delicious but not too addictive. He also got some of the vanilla flavour icing and its such a big packet I don't know what to do with the rest of it, don't want to let it rot in my cupboard. Any ideas?

      Belated happy birthday Amy!! That cake sounds fabulous! Why don't you freeze the extra icing? Maybe put it in smaller containers. I always freeze leftover icing and it's fine.

        Thanks for the tip on the site! I'm low-carbing and my husband is diabetic, so we can probably really use that site!

          The icing is in powder form, I was thinking I could add it to things in place of splenda or something but not sure what

                  Well I kind of answered my own question here...
                  I used some of the vanilla icing (as well as some low carb belgian choc chips) in flax bread. It was goooooooooooooooood. Might include it in a mock danish instead of splenda next.
