  • Snacking after Dinner

    What do you think would be a good snack for after dinner, somthing that definately would not cause a stall? I know most people don't like to eat after 8 pm but I am assuming that is because they are looking at a 10 or 11 pm bedtime. I tend to be up to 2 am everyday. I eat my dinner between 6 and 7pm so by 11 or 12 I am looking for something to tide me over before bedtime.
    Any suggestions?

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      Thanks for the suggestion. I really can't tolerate stalks of celery because of it being stringy, would green pepper with cream cheese be okay or is green pepper too high in carbs say to eat a half pepper?

              Watch that green pepper, it's pretty high in carbs for a veggie... I found that out the hard way after I ate it and went over my carbs for the day.

                Salmon unfortanately is not one of my favorite foods, would eating a couple pieces of sandwich meat and cheese rollups be too much sodium for so late at night? Pladd thanks for the heads up on the green pepper carbs. Have to find something to enjoy that cream cheese with, maybe a couple of scrambled eggs and cream cheese will have to do.

                  I didn't like cream cheese straight either but I'm becoming used to it, especially with a titch of Stevia and cocoa (that's my new late night snack). Green peppers aren't SO high in carbs, according to FitDay one large (2.25 per pound, approx 3-3/4" long, 3" dia) only has about 7 net carbs, and strips wouldn't be nearly that much. What about guacamole on something? Avacados + mayo would be very very filling.

                    Peppers are on the list of salad veggies and if you count them as part of your 3 cups of veggies, you won't get even close to your 20 net carbs. On induction, I never even came close to 20 net carbs. I love peppers, green, red, yellow, orange...If you cut them into strips and have them that way, I doubt even a whole pepper would make more than a cup of strips.

                    Another snack that I love is stuffing jalapeno peppers with cream cheese, wrap them in bacon and cook them in the oven....a little more effort, but worth it.

                      Another snack that I love is stuffing jalapeno peppers with cream cheese, wrap them in bacon and cook them in the oven....a little more effort, but worth it.

                      If I need a snack it is sometimes as simple as cheese wrapped in a piece of lunchmeat or some leftover from dinner. Too bad you don't like celery that is my favorite snack. Helps with the need to eat something crunchy.

                        Thanks for all the suggestions... last night's snack ended up being 4 ounces of pumpkin with cream cheese, SF vanilla and cinnamon. Tonight I think I will go with either the same thing (since I have leftovers in the can) or two eggs and cream cheese and SF vanilla scrambled up.

                        Just hope I am not overdoing the cream cheese.

                            Make yourself some Clouds (I think that's what they are calling them).

                            1 pack of Creamcheese
                            3/4 a stick of butter
                            1 or 2 tsps of Da Vinci's SF (flavor of your choosing)
                            And Freeze

                            You would need to make this ahead of time since you cant freeze on the fly. I like to pour the mixture on a big tupperwear lid. Once It's frozen I break it into little chuncks that I can grab out of the freezer whenever I feel the need.

                            The whole thing is only going to be about 10 carbs and it should take you a week or more to eat the whole thing.. Since I'm in OWL, I process up some strawberries and add those to my mix! Makes a wonderful treat!

                              1 cup sliced green pepper has 2.6 net carbs according to the USDA.

                              Atkid, the daily veggie amounts don't change during extended Induction. So if you choose to use veggies as your snack, be sure to count that snack veg as part of your daily 3 cups (3 cups salad list or 2 cups salad list + 1 cup other list).
