      Marshmallows &
      Marshmallow Crème

      </FONT>Ingredients:
      • 3 envelopes unflavored gelatin
      • 5 Tablespoons Splenda®
      • 3 egg whites
      • 2 teaspoons vanilla extract
      • 1/4 cup cold water
      • 3/4 cup boiling water
      • 1/2 teaspoon marshmallow flavored oil [optional]
        (LorAnn or American Spice)
Sprinkle gelatin over cold water in a mixing bowl. Set aside for 5 minutes to soften. Add to boiling water in saucepan; cook and stir until gelatin is dissolved. Remove from heat. Cool to consistency of thick syrup. Stir in Splenda® and vanilla (and marshmallow flavored oil if using.) Beat egg whites till soft peaks begin to form. Very slowly, trickle a small stream of gelatin mixture into egg white, beating until all gelatin is mixed in. Continue beating until light and fluffy (but not until they're dry.)

If you're making marshmallow crème, pour into a jar (jelly jar, peanut butter jar, etc.) and refrigerate. If making marshmallows, continue...

For Mini marshmallows -- Pour into greased and floured pan, cool to set, and cut into size desired.

For larger marshmallows, or marshmallow "eggs" -- Fill large square pan with a mixture of 2 parts vanilla protein powder to 1 part dried milk powder (the new Keto milk powder works well here.) The pan should be about two inches filled. Take a dry raw egg and make indentations in the powdery bottom with the fuller base of the egg for making marshmallows, or with the oval side of the egg for making marshmallow "eggs" (see figure 1.) Then pour the marshmallow creme filling into the little "moulds" (see figure 2), sprinkle a dusting of the powder mixture over tops of marshmallows, and allow to set (see figures 3 & 4 below.) If you make the "eggs" and want to cover them with chocolate, melt the dark chocolate low-carb bars in the microwave till very soft and almost liquid (you can use the Carbolite, the DeLite bars, etc.) Dip each formed marshmallow egg into the chocolate quickly to coat and place flat side down onto waxed paper to set.

The mini ones are perfect to sprinkle over puddings or berries and divine over pumpkin pie or mock sweet potato casserole! Or use the marshmallow crème wherever your creative mind takes you!
5 carbs in entire recipe for marshmallow crème. Adjust as needed when making formed "eggs", etc.

      Behold the peep

My favourite is the Cadbury mini eggs. Damn couldn't eat just one. Ate em like pop corn. Unfortunately, they are hubby's favourite as well. So they are now in the house. He buys em in the pound bag!!! He is evil. Evil I tell you!

Peeps on the other hand? The kids love em. I could never stand them. The sugar felt like sand on my teeth.

still have a few more pounds to go!!

I was about to say that I'm the same with Cadbury's Creme Eggs...but other people have the same feeling lol.

I was thinking the other day about how proud I am of myself for not even being tempted to buy one cadbury egg this year! (Since theyre only sold from January to April lol)

And then I remembered that this time last year, my friend and I went to the dollar store at lunch time and we each bought 12 cadburys eggs for $1 and I felt so sick...

And I *had* to be born American!

Yes, Rich, peeps are those diabolical marshmallow-sugar laden beasts that are formed into the most adorable shapes and colored in shades of "spring" .. they hatch every year about this time and every single store is packed with a million of em!

This year they even come in PURPLE, which of course is my favorite color!

I remember one year I downed 6 boxes of them in a day. 6!!

Steph - That actually makes it easier for me to resist them. When we were kids, it was really hard to get Cadbury eggs. You'd have to wait all year and then get them the week before Easter, and then they'd be gone for an entire year. Now, with pre-Easter and post-Easter sales, they're around all the time. I don't feel like they're more special than a regular candy bar anymore, and I pass by the candy bars every day!

There is a British equivilient, but the name's slipped my mind. My aunt used to buy them for me from Poundstretcher and Hypervalue and such.

ARGH! I can see them, it's annoying me that I can't remember the name lol.
