Afraid not, Leecy - we only deduct the fibre carbs, all others need to be counted
Wondering how to get 'most' of your net carbs from your induction veggies?

Never ignore "other carbs" always look for "other carbs"

Make your own chips with turnips. fried cheese is good. Browse the recipe board. Use celery to dip.

Stay away from the major brand cereals too. When you are ready for cereals (more than likely pre-maintenance) kashi is going to be the best brand.

Carbohydrate refers to everything from the simplest sugar, which can be utilized instantly by our bodies, all the way up to structural plant fibers, which we can't digest. If Labels list under total carbs the g's of sugars and fibers, "other carbs" by default refers to digestible carbs complex in nature which can be digested, but more slowly than simple sugars. They must be counted.

Re: Dying for a crispy Crunchy snack !!

Here are some of my favorite induction-friendly crunchies:

Celery sticks filled with cream cheese spread
I like to add ingredients to cream cheese to make my cheese portion go farther. I may add minced garlic (if my BF is outta town LOL), minced black olives, capers, minced pickles, minced hard-boiled egg, add a dash of tobasco... whatever strikes my fancy at the time.

              Jicama sticks and dips
My favorite dip for the jicama right now is bacon Ranch dressing. Made at home it's low in carbs and nummier than the bottled.

Fried cheese, microwaved pepperoni, microwaved bacon, microwaved hard salami...
I get a little nervous about the nitrates, though, and I try not to go overboard with these.

              Bacon-wrapped broiled whatever...
I like to experiment with various low-carb "stuff" wrapped in bacon and broiled until crispy. My current favorite is bacon-wrapped shrimp.

              Chicken fingers
Chicken breast strips rolled in parmesan and fried.

Flax crackers (when I have time and inclination to make them) spread with cream cheese spread, boursin, tuna or chicken salad, ham or beef spread, etc.

OK I gotta go... getting hungry LOL

                Those look yummy, Suzanne!
One more good crunhy: Cauliflower florettes, with a dip if desired.
                (I like mayo-salt-pepper and guacamole/avocado)

Cheese crips, as already recommended are really easy.

I put about an ounce of cheddar cheese on a piece of parchment paper in the micro for 1 minute and 15 seconds. Let it cool a minute and munch away. I sat down on the couch last nght with one of these and he thought it smelled awful, but yum, it sure was tasty and satisfying.

Yum, Miss Phode! Those have got to be hard to contol quantity of; I remember the open-faced cheese toast Mom used to burn up in the oven. The toasty cheese was delish, even though funny looking!

How about sliced cucumbers soaked in vinegar & salt & pepper?

They're super good, but I don't make more than one at a time. I never make a batch of them. That could be dangerous!

When I prepared for induction, I used my food dehydrator to make a lot of turkey jerky. It is virtually fat free, so it got very crisp and crunchy. I've got the last bag in my desk now. I do have to count carbs as the original meat was packaged thin slices with some carbage. (That's why didn't eat them much on induction).

'Sup Boonie! Veggies ROCK! *high five* Oh yes, cauliflower is awesome! My favorite crunchy veggies are:

                          broccoli and cauliflower florets
                          cucumber slices
                          radish slices
                          snow peas
                          zucchini slices
or just throw a mix of induction-friendly veggies chopped in a bowl for a nice, crunchy salad...

I have been making my fake mashed potatos(I am a mashed potato fanatic)with boiled mashed cauliflower and all the good toppings. (butter, cheese, bacon bits, and some sour cream) mmmmm yummy but wanted to see if i would like jicayma? thanks
