Re: breakfast ideas
I know how you feel. Its difficult. A lot of people eat left overs from the night before... me included. I am getting real tired of eggs and sausage, etc.
If you look at Linda's Low Carb site, there are a lot of ideas there.

Re: breakfast ideas
Lately I have been making quiches for quick evening meals and having a slice of (leftover) crustless quiche containing eggs, cream, cheese, bacon, cooked grated cauliflour and spring onions for breakfast with a few cherry tomatoes.Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Re: breakfast ideas
I love avocado for breakfast... just with salt and a little vinegar. I usually have this with some kind of leftover meats or with a cheese omlette. Before and after:

Re: breakfast ideas
I normally have leftovers, too.
One of my favorites is to take leftover meat like chicken or steak, cube it, sautee it in olive oil and spices. When it's heated, I put it on a plate then I fry an egg or two (over easy) in the leftover oil and serve it on top of the meat. Very satisfying.

I'm seconding quiche.Originally posted by ElizellenLately I have been making quiches for quick evening meals and having a slice of (leftover) crustless quiche containing eggs, cream, cheese, bacon, cooked grated cauliflour and spring onions for breakfast with a few cherry tomatoes.
I did one of these with some onion, tomato (fresh and sundried), and broccoli today. I used parmesan and cheddar. I'm not sure if I've ever made anything that delicious.
They're great for breakfast.

Re: breakfast ideas
Someone posted this somewhere else on the site. When I'm feeling tired of the usual fare, I usually share one with my bf. It tastes like a bran muffin, but not as dry.
Muffin in a Minute
Serving Size: 1
1/4 cup flax meal
1/2 teaspoon baking powder
1 packet splenda packet
1 teaspoon cinnamon
1 large egg
1 teaspoon butter
Put the dry ingredients in a coffee mug. Or a bowl for a different shape.
Stir.
Then add the egg and the butter. Mix.
Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.
Cream cheese would go nicely, too.

Re: breakfast ideas
Wait, people can get tired of eggs/bacon or eggs/sausage?! <boggle>
But really, when eggs start getting to me I just flip me meals. Salad and some meat for breakfast, have some nice eggs or quiche for dinner!
