Couldn't you do poultry/fish and veggies in Hong Kong?? I think they have those over there........just kidding. I think it would be easier being away from all of the "American" processed stuff.

Anyway....to your question of what will happen if you go off induction and then start eating high carb (even good carbs)? Well, I tried to eat healthy but old habits came back. Let me tell you, I've never gained weight back so fast on a diet than Atkins. But that's because I treated it as a "temporary" diet and not a way of life.

I guess I would just say, watch out. Don't be surprised if it all comes back.

If you start eating a high calorie high carb diet, you will gain weight. If you follow another sensible eating plan and exercise, you may maintain the weight you lost and lose more, though you will most likely not have the benefit of ketosis anymore depending on your eating plan.

I've heard that some gain back water weight when suddenly going off of a very low level of carbs to a very high one, but personally i would think it would depend on your diet?

      Hope this helps?
Thank you for understanding, yes when I come off it i will just be eating sensible.. a lot of exercise. I thought that was the case I just wasn't sure.

I'll be eating a lot of rice and noodles of course (hate fish it's a shame) but they arn't refined carbs like in Chocolate so I hope they wont have an adverse effect.

Yeah the thing is I am usually rather healthy any way, and love the exercise. Only reason I have put on weight both now and a few years ago was some real life issues which caused me a lot of depression.

I do appreciate it's a way of life, I'm not trying to stick it to any one here I respect everyone. But I liked my lifestyle in regards to food before I was depressed and I don't wish to change it, just to quickly get back to where I was.

It depends on what the noodles are made from, but refined carbs are things like white flour, white rice, sugar, etc. So, even though noodles and rice are not high in simple sugars like chocolate is, they are incredibly high in carbs, and they're most likely refined carbs.

The way that our bodies react has a lot to do with the glycemic index. Atkins OWL phase follows the glycemic index and reintroduces foods in order of lowest GI to highest GI. Obviously, we never reintroduce chocolate (although cocoa is allowed as a spice), we do reintroduced whole grains and unrefined and natural carbs.

I know you're not planning on doing Atkins by the book, but here is the order of rungs anyway, just in case you're interested:

          OWL RUNGS
Rung 1--Veggies (another serving of the 54 induction veggies)
Rung 2--Dairy (fresh cheeses, more cream, milk)
          Rung 3--Nuts and Seeds
Rung 4--Berries and Melons (strawberries, raspberries, blueberries, blackberries, cranberries, cantaloupe, honeydew)
          Rung 5--Wine and Spirits
          Rung 6--Legumes
Rung 7--Other Fruits (apples, oranges, bananas, kiwi, cherries, etc.)
Rung 8--Starchy Veggies (carrots, potatoes, etc.)
Rung 9--Whole Grains (oatmeal, whole wheat bread, brown rice, corn tortillas, etc.)

I just wanted to show you that instead of staying on induction for more than 2 weeks, (which does nothing to speed weight loss, by the way) you could begin moving up the rungs, taking each one for 2 weeks, and incorporate LOTS of foods while still losing weight. I've lost more weight following OWL properly than I did trying to extend induction. OWL is valuable because it helps pinpoint food sensitivities. I found out that I am sensitive to potatoes--I simply cannot eat them, unless I want to be in severe pain. The interesting thing is that before Atkins, I ate potatoes EVERY SINGLE DAY.

So, Atkins is pretty doable. I would do some research on refined carbohydrates and the glycemic index if you are dead-set on going from Induction to a high-carb diet.
