    Just discovered a new way to do zucchini:

    You shred the zucchini on the big holed grater (like for carrots in salad) into a non stick pan... then you cook it without anything at all added. Toss a lot and avoid it sticking by altering the heat, or if necessary adding a very small amount of water. When the zucchini is wilted it will be cooked. Add salt. Then add a good dollop of butter and toss until it is melted, no longer. Add a big handful of parmesan and toss again (heat off). Black pepper... and that's it. Easy peasy and tasty for when you're in a rush.

      I don't care for parm though, so I'd probably substitute harvarti or hot pepper cheese or something - but either way I'll try that.

        Thanks on the Jicama explanation Mitzi! I had it for the first time the other night (on the recomendation from this board) and I sliced it as thin as possible and I also cut julienne style (little matchsticks) and fried both types in olive oil. OMG, just like really good french fries. Even hubby liked em. I tried it raw last night but didn't care for it.

          Ummmmm, Zucchini is one of by absolute favorites. And now with this WOE, I've been telling everyone in town that they don't have to ambush anyone with their excess Zucchini's, I'll take them all. I slice them thin, put them on my dehydrator trays, sprinkle with whatever spices hits my fancy (Old Bay, garlic & onion powder, smoked BBQ, etc), and dry them. I then fill up my canning jars and vacumn seal them. They are a marvelous snacking chip

            Ooh - I didnt realise you could dehydrate courgettes (zucchini)!! What a great snack idea.
            Wondering how to get 'most' of your net carbs from your induction veggies?

              I would've never thought to do that... I need a dehydrator.

                  It looks like I am going to have to try your way of cooking jicama! Sounds great. To tell you the truth, while I do eat raw jicama almost everyday, it's not because I love the taste. The taste is OK (I didn't like it at all at first because of the "root" taste it has but I eventually got past that) - it's the high fiber content that I seek. I will definitely try frying it - thanks!

                  I will also try Sally's way of cooking zucchini... that's one veggie that I haven't tried yet.
