    LOL, I never thought I'd be asking this, but here goes!

    I completed induction last week and am cautiously stepping out to the next rung. I am keeping as close to 20 carbs/day as possible, however, with just some variations in foods, like increasing my dairy and flax meal some. Both help with my digestion, which did not do so well on induction.

    For now, while I stay closer to the 20 carbs I'd like to keep my fat intake nice and high, but I'm getting a little stale in that area. I have no problem with butter or oil on my veggies, but I'm struggling with meat a little. Sometimes it comes out a little dryer than I would like (ya I'm no fantastic cook, that's for sure!). Since gravy is not really doable, and I don't want to have to just slather everything with mayo, what else is there?

    I'd also like to start working a little with coconut oil if possible. But I've never used it before. And how many eggs is a good idea to eat in a day? I really enjoy them and can't eat them except for when on Atkins. So they're a wonderful treat. But I don't want to go too crazy on them either!!

    Any tips are much appreciated!

    Lots of people cook with coconut oil - the type I buy has very little coconut taste to it so works well. Others make a sweet 'treat' by mixing it with unsweetened cocoa powder or vanilla flavouring etc plus some 'legal' sweetener and chilling it in balls or chocolate moulds.

    Remember desserts and sweets were considered by Dr Atkins to be occasional luxuries - not daily menu items - and we are allowed up to 3 servings of sweetener a day, whatever phase of Atkins we are at.

    There is no limit on eggs (except for the 'eat till satisfied and not till stuffed' rule) And they are high in fat too

    As for adding more fat to meats, I often sautéé peppers or onions or mushrooms in plenty of butter to use as a garnish, which moistens the meat nicely.

    You can make a tasty 'gravy' by adding some water to the pan you have cooked your meat in and gathering up all the juices and crispy bits with a spatula or wooden spoon, then adding some cream to it and simmering a little till it thickens up.

      Thanks Elizellen. Great tips! Those coconut balls sound yummy and I might even try them some time. But I was thinking of using it more for savory dishes. Will have to do some research.

        Hi Des, I cook allot woth coconut oil. The kind I use has a little coconut flavor and a great smell. You can smell it throughout the house when I'm cooking I love it for sauteing vegies in. Especially zuchini and red bell peppers. It's also great to fry pork chops in. I've never tried it to make anything sweet. I try to stay away from stuff like that if I can help it.

        I also love eggs. I make devilled eggs as a quick snack throughout the day. And I eat a copuple in the mornings. Then I eat then crumble on my salad. I probally have at least 5 eggs a day.

          I smother everything in mayo so I cant help you sorry.

            hiya!

            I love to put a pat of garlic butter on my steak or chicken.YOu can make your own by combining some softened butter with some crushed garlic. Pepper and herbs like rosemary work great too and are delicious. experiment. ONce you mix your ingredients together put it in some aluminium foil and roll up and refridgerate . Just slice off a bit as you need it!
            Bearnaise sauce is awesome on steak too ( my favourite)

              Mmmmm, those are some yummy ideas! Is there a specific bernaise recipe that low carbers use? (I did a search here and couldn't find anything). I'm avoiding wine right now, so if there's one that can be made without it, that would be excellent.

                I know not everyone likes doing this, but hot sauce often makes things taste much better, and you'd be shocked at what things do taste better with some hot sauce!

                  That's a good point. I've been trying to remember to do that. DH is allergic to hot sauce, so I'm used to cooking without it. But I should try adding it to just meals from time to time. Thanks!

                    NOt all bearnaise sauces are made with White wine -- many recipes use tarragon vinegar or white wine vinegar

                      Sounds like you are doing well. I usually have eggs once a day. Once in a great while twice. You do not wanna overdo them. That is for sure because you have them everyday (most people do on atkins) anyway
