LOL, I never thought I'd be asking this, but here goes!
I completed induction last week and am cautiously stepping out to the next rung. I am keeping as close to 20 carbs/day as possible, however, with just some variations in foods, like increasing my dairy and flax meal some. Both help with my digestion, which did not do so well on induction.
For now, while I stay closer to the 20 carbs I'd like to keep my fat intake nice and high, but I'm getting a little stale in that area. I have no problem with butter or oil on my veggies, but I'm struggling with meat a little. Sometimes it comes out a little dryer than I would like (ya I'm no fantastic cook, that's for sure!). Since gravy is not really doable, and I don't want to have to just slather everything with mayo, what else is there?
I'd also like to start working a little with coconut oil if possible. But I've never used it before. And how many eggs is a good idea to eat in a day? I really enjoy them and can't eat them except for when on Atkins. So they're a wonderful treat. But I don't want to go too crazy on them either!!
