  • What's for Dinner?

So I just was reading the post "What's For Lunch?" and thought it would be appropriate to do a "What's For Dinner?" post especially since this is a holiday night. I'm making taco salad and having chips for dh and ds and using pork rinds for me. mmmmm They have some candy so I bought an Atkins carmel nut bar just in case I feel the urge to grab for a candy. I also bought some diet chocolate fudge soda so I should be prepared! Not making the fudge since it's too late now and I'm getting ready to go work out. So everyone...

Everyone's dinner sounds better then mine! I had a "Burger n' Greens" from Red Robin which is just a green salad with a bunless burger w/swiss cheese grilled onions and mushrooms on top.

Dinner for me tonight will either be an Omelette with bacon and fresh veggies, or spaghetti squash with tomato sauce, mozzarella, and pepperoni. Can you tell I don't feel like cooking?

I made meatballs last night. I'll heat those up and eat them with something, although I don't know what yet. I wanna hit the Farmer's Market and check out the eggplant. If the Eggplant looks good, I'll dip that in egg and fry it. If not, i will get some zucchini and slice it into noodles. I have a Spirooli (spiral slicer) and it's great for turning zucchini, and daikon radish into "noodles".
