Re: Dont Go Off Diet For Thanksgiving!

we dont do the whole thanksgiving thing here in holland but my american colleague will have a late thanksgiving dinner on Sunday and she's so sweet to make atkins friendly food for me.
I gave her the link to lindas recipes and she says she's found tons of ideas there (as do I all the time).
so yeah, not need to go off plan.

and sunny, please post the bread recipe, I'm ordering atkins friendly bread mixtures and they are great but if I could make bread myself...that would be really great.
Date to reach goal: I don't care, as long as it happens :P

Re: Dont Go Off Diet For Thanksgiving!

We always end up eating two hanksgiving meals (every holiday really). This year we will be doing lunch with the inlaws and dinner with my parents. Both have agreed to have some foods we can eat and we will be bring some foods as well. For us Thanksgiving really hasn't been a challenge, but I have to thank the boards for that. Posts back in September got us planning and now we are all set and in no danger of falling off the wagon so to speak.

I really think it is a matter of deciding what you want and sticking to it. I have no cheated since I started this WOL in June and I do not ever want to. It just wouldn't be worth it in my opinion. Hubby cheated a few months back one day and said the food (a carmel, marshmellow loaded sweet potatoe) was good but not as satisfying as our usual diet. More proof that there is no need to cheat and enjoy the holidays.

LOL You have to be up to the nut rung to be able to partake of it. It is made with almond flour and lots of cheese. I am coming up with my 'recipe' for the stuffing as we speak (type), but will probably make it the same way I make regular stuffing--just using this bread recipe for the cubes. I will post it later.

I've got another batch in the oven right now! Pictured below is the 8x4 inch loaf and the small round one is the one in which I put stuffing spices (sage, parsley flakes, paprika, extra garlic and onion powder). Okay--here it is:

                    Artisan Bread Loaves
                    8 ounces cream cheese, softened
                    4 eggs
2 ounces almond flour, ½ cup
¾ cup low carb bake mix (I used Atkins Bake Mix)
                    1 teaspoon baking powder
                    ¼ teaspoon garlic powder
                    ¼ teaspoon onion powder
                    Other seasonings of your choice
1 ounce parmesan cheese, grated, ¼ cup (I used the kind in a can, Parmesan & Romano blend)
2 ounces Italian blend cheese, shredded, ½ cup
2 ounces Kraft Shredded Parmesan, Romano and Asiago cheeses (found in the dairy case)

Place the softened cream cheese in a medium mixing bowl and beat with electric mixer until fluffy. Add eggs one at a time and keep beating until well blended, scraping sides of bowl with a spatula. Mix together the almond flour, bake mix, baking powder, garlic powder and onion powder. Gradually blend in the dry mixture with the cream cheese & egg mixture. In a food processor, place the Italian cheese, the shredded cheese and the parmesan cheese and process until finely ground. Mix the cheeses into the bread dough. The dough will be very thick.

Spray an 8x4-inch loaf pan with cooking spray (I use butter flavored Pam) or grease very well. Spread thick bread dough into the pan and smooth it out level. (I sprayed the top with butter flavored Pam) Bake at 350ºF for 30 minutes. After 30 minutes, check to see if it is getting too brown and cover with loose foil and continue baking for 10 to 15 minutes longer until the loaf is firm to the touch and a knife inserted near the center comes out clean. Remove loaf from pan and cool on rack.
                    Makes one 8x4 inch loaf
                    Can be frozen

This recipe is a mixture of two recipes from Linda’s Low Carb Menus and Recipes Website.
