  • Polk Salad?

    i was at work today eating some Collard Greens & Ham Hocks for lunch... and a woman from Arkansas came up to me and asked me if that was some Polk Salad... has anyone ever had this? she told me it is a Country thing and i wouldnt know anything about it since im a Cali Girl... she told me they are 'like' greens, but you find them out in the open fields like weeds..... does anyone know where i can get some of these greens so i can try them? she would tell me too much about them, just that her Grandma used to make them eat it... she hated it... i want to Try It! i LOVE greens...

    Young pokeweed leaves can be boiled three times to reduce the toxin, discarding the water after each boiling. The result is known as poke salit, or Poke salad, and is occasionally available commercially.[1] Many authorities advise against eating pokeweed even after thrice boiling, as traces of the toxin may still remain. For many decades, Poke salad has been a staple of southern U.S. cuisine, despite campaigns by doctors who believed pokeweed remained toxic even after being boiled.

      well..... Thank You For That Info! thats a good thing to know! i think ill just stick to my Collard Greens... sounds much safer to me i wonder WHY people ate them knowing they would make them sick... wow! i also found a website that i thought was cute http://www.flickr.com/photos/view-finder/1506385325/

        We had many a fine mess of polk salad growing up, and it never hurt us any or made us sick! What I liked better, though, was polk pickle. It was the very young, fleshy stems cut up in chunks and cooked in a sweet/sour sauce. I've tried to make it since I grew up, but it didn't taste like Mama's.

          My grandma fixed polk salad all the time too and it was yummy.. And I am still alive..lol Not sure what it looks like though and where you find it..

            We Virginia girls are tough! I can find it right outside my door, near the bird bath. The birds love the purple berries and they bring them to the bird bath and when they drop the seeds, plants sprout. They also drop the berries on the porch, and I step on them and carry the purple mess in on my shoes. The juice from the berries was used as ink and dye by the Indians and early settlers.

              Poke Salad??

              Heck, here in Kentucky every spring myself and all my neighbors go around to each others yards and pick the young leaves and shoots. The fella right across the street has a great big patch all around his barn. We either boil them like traditional greens or better yet, one of the local ladies here takes the young leaves, about 4-6 inches long and dips them in egg and then cornmeal and then fries them golden brown. Jeeezzz my mouth waters just thinking about them!! They have a mild flavor that reminds me of asparagus, especially the stems. Another neighbor boils the young leaves and then mixes them with egg and bread crumbs for fried "poke patties"... Wow talk about good stuff.

              Anyway, I have also heard of a toxin in poke plants but folks around here have been eating poke their whole lives with no reported ill effects. I personally have never gotten sick or ill from eating it but I only eat it in the spring when the plants are young and tender.

              Also, it is available commercially in cans so it can't be that toxic huh?? Oh well, I guess breaded and fried poke is out for me but I'm definitely going to keep eating it boiled like regular greens. Yum...

                  thanks for all the info! i wish i could find some out here to try!!! but at least i can get ahold to lots of other types of Greens... i never knew this was something REAL either... i had only heard that song too i thought it was just someone's Nickname... lol..... and Randy thats a nice piece of transportation you got there! Whooo Hooooooo!

                    I would send you some seeds, but it's considered a noxious weed and it is against the law to mail it to California. It only grows in the Southeast USA. Come visit me in the spring, and I'll cook you a mess. If you are gonna eat authentic Southern veggies, you have to refer to them as a 'mess.'

                      Thank You Sunny! your a Sweetie Pie... if i came to Virginia i would have you cook me up a MESS of everything you got! and it probably wouldnt be Legal if you know what i mean? i LOVE me some Southern Food... i know exactly what i would ask for... Sweet Cornbread Pecan Pie Candied Yams/Sweet Potatos Fried Chicken Biscuits & Gravy Homemade Ice Cream etc......... i would be in Hog Heaven, but probably very sick and bloated... i CAN dream tho... i used to eat all those things... now i just Dream....... one day i may have a bite of sumpthin, but for now ill stay Legal

                        Poke is delish! But you have to be careful to pick only the shoots or the young leaves.

                        Other good "free greens" are lamb's quarters, orach, purslane and dandelion. Of course, all of them are weeds that people hate because they invade lawns, but they are nutritious and edible. I remember reading a Euell Gibbons book that included the nutritional info of some of these wild greens and they had more nutrients than the farmed greens.

                        Of course, you have to know what you're picking and you have to make sure you don't pick it from a contaminated field or near a roadway.....

                          Poke grows like crazy up here too Sunny. I've got the frikkin things EVERYWHERE! And once it gets big, just try yanking it out! It's like it's anchored into the ground with steel posts!!
                          But yeah, the wild birds do love the berries, though my chickens won't touch it. It's actually kind of a pretty shrub.....an annual up here.....just tends to show up everywhere!

                            Hey, I can cook you up a big mess of all that but the pecan pie and homemade ice cream. I've never tasted pecan pie and I HATE ice cream. I can get shivers and get sick watching you eat that nasty stuff. My sister-in-law will make you the pecan pie, though. I do make awesome cornbread and biscuits and also yeast rolls. Sadly, I have found out I am really allergic to grain, especially wheat! I have made biscuits and rolls for family and people from church since I found out, and the smell nearly drives me crazy!

                              You got chickens??? I wanna have chickens again. I love chickens! And ducks!

                              I tried to get that big bush beside the porch out last year after it got big, and I don't think a stick of dynamite would have budged it. I couldn't even cut it down close with a very sharp knife. I cut those suckers down as soon as they sprouted this year. I don't mind the ones away from the house, but they made too big of a mess (not to be confused with the mess you eat) of the porch, bird bath and carpet.
