Hi, Tweetypie! Your spinach casserole sounds divine ... yum yum We had braised pork chops (the other white meat) w/onion, and a nice romaine 'n tomato salad with an oily Greek-style dressing. DH is not on Atkins so he got applesauce and bread 'n butter, but that's okay ... for dessert I had a couple of Tbsp. of sour cream sweetened with a half packet of Splenda and a drop of vanilla = instant pudding!

Last night I made shrimp scampi and it was almost impossibly good ... the fish market guy steamed it, so all I had to do with remove the tails and warm it in a fragrant brew of butter, olive oil, a little chicken broth, and some seasonings. With some steamed broccoli, it was delish!

I tried a recipe from Linda's Low Carb website called Josie's Shepherd Pie. It's layers of hamburger mixed with egg and cheese, green beans, pureed cauliflower topped with shredded chedddar and it was good but could have used more seasoning.

Re: What did you have for dinner?

I roast turkey breasts all the time. The latest was 2 nights ago (the skin is the best part straight out of the oven!), & it also served as lunch for me the next day as well as hubby's sandwiches! I also packed up some for my Mom who was flying out so she that could have a snack on the plane. Then my nieces and sister tried it when she arrived that afternoon and loved it.

My turkey is like the Red Cross - everybody gets a piece!

Holy smokes, Sheila ... you look great! And turkey .... ummmmm. Love the stuff. Normally, after Labor Day I won't make it again until Thanksgiving, so that it will taste "special" ... but that was before Atkins!

Last night's feast was braised beef (still too hot to fire up the oven) and a nice green salad. Tonight? Think I'll just wing a chicken stir fry. Tomorrow is grocery shopping day ... never before have I spent so much time cruising the meat aisle

stick with you induction! your body will thank you! for dinner last night I had homemade turkey soup with broccolli in it. So easy to make. take turkey thighs(I used three), put in a baking dish, rub with 1 tbs butter, sprinkle with Mrs. Dash, add one bouillon cube, cover with water. cover pan with tinfoil. Bake at 350 until done adding more water if needed. When done strain juice into soup pan. add 1 can low sodium swanson broth (i used vegetable) chop turkey and add broccolli right before you serve so it doesn't over cook. it was fabulous! there was enough turkey left over from the soup for supper for the whole family and leftovers for lunch today.
