Coconut Oil ....

    Since I have not eaten coconut oil before, just happen to have several bottles bought a few years ago in a shelf-pull lot (thought they might be good for something, like massage/suntan/essential oils etc).... I'm not sure how to tell if it's still good or not. It doesn't smell like olive oil, LOL.

    Is it safe to cook with? Is it supposed to have any distinguishable smell?

      The stuff I bought recently online, the extra virgin organic stuff, has a light, pleasant coconut fragrance ... and the consistency of cold cream! If it smells rancid or "off," throw it out ... any rancid fat is bad for you. In fact, any oil I buy, I automatically prick open 1 or 2, 200 IU capsule of Vitamin E and dump the contents into the oil to prevent it from going bad before I can use it up ... it doesn't affect the taste; I do it with all oils ... olive, etc.

      I enjoy cooking with coconut oil ... in fact, that's all I use it for.

      I've never seen it in gel caps before, but can't see where they would be a problem on Atkins. Other than, it would probably take quite a few of 'em to get a decent dose I find a generous teaspoon is enough to cook two eggs ... then I dump the remaining oil over the eggs and it kind of gets "absorbed" by them ... tastes really good!

        WOW! A vitamin E cap keeps oil from going rancid????!!? That's ANOTHER new idea to try! (I presume now that vit. E oil never goes rancid, of course)
        The oil I've got is pourable, and fragrant, it just seems a rather strange fragrance for food use. Still not sure. (Boonie heads off to Google Land again)

          OH.... I wish I could partake in this coconut oil miracle... I just cannot stomach it... the taste to me is so overwhelming... ANY others out there grossed out by this stuff?
          ANY SUGGESTIONS.... I will try the oil with my eggs tomorrow morning... Fingers crossed... I will like it...

                This is another thing I got in that old lot of stuff. At least it has a somewhat tolerable orange flavor mask!

                There are plenty of brands, not all are liquid. Here's a snip about CLA (from CLA which sells a capsule version)


                Conjugated Linoleic Acid (CLA) is a previously unrecognized nutrient that occurs naturally in wide variety of food, and particularly in beef and dairy products. In more than 17 years of research, CLA has been shown to be an anticarcinogen in several animal models, reduce the adverse catabolic effects induced by immune stimulation in rats, mice and chickens, enhance growth performance in rats and inhibit plaque formation in rabbits fed an atherogenic diet at least in part via changes in lipoprotein metabolism. In the last several years, scientists at the University of Wisconsin-Madison and elsewhere have begun to study CLA’s affect on metabolism, energy retention and balance between body fat and lean body mass.
                According to a recent scientific paper, CLA inhibits the body's mechanism for storing fat and causes the body to utilize fatty reserves for energy.
                CLA has been shown to inhibit lipoprotein lipase, an enzyme which breaks down fat gobules in the blood so that adipocyte (fat cell) uptake, or body fat accumulation, can occur. The inhibitation of lipoprotein lipase results in reduced fat deposition.

                CLA also has powerful antioxidant properties. In fact, it has been proposed that adding CLA to foods may prevent oxidation and mold growth in the food products.
                Four capsules of Tonalin CLA provide the equivalent amount of Conjugated Linoleic Acid (CLA) of approximately 6 pounds of beef, 50 slices of American cheese, or a gallon of ice cream.

                  eek. i used it to cook an omlette a last week and swear it made me sick. I am not sure though, it's quite possible I had the flu... I'm somewhat scared to try again but maybe it wouldn't be such a bad idea if it will make pounds disappear.

                  It can be used for other things - like stated. I've used it in soapmaking, as a conditioning treatment for hair, moisturizer.. The omlette was actually the first time I ever tried to cook with it...

                    The only way I can take coconut oil is as a thinner for chocolate. Oddly enough, I like coconut ( I use the unsweetened shredded dried stuff for baking and as a breading for shrimp) But coconut oil is so, I don't know, just so.....

                        Just a note, Elizellen was clarifying when one can start using coconut shreds. Coconut oil is a fat and would be fine in all stages of Atkins.

                        Coconut oil doesn't work for me cooking eggs. Sesame oil however is lovely for eggs.

                          I probably wouldn't bother with the coconut oil, either, except that I'm anxious to see if it speeds up weight loss, as it's reported to do. Just using myself as a lab rat

                            so... I tried it with my eggs... and its just not right! I even added garlic to ( I was hoing) mask that flavour I don't like.
                            so... I was thinking and maybe its that I don't care for it because I associate coconut with something sweet... so I am going to play with some splenda, and spices and cocoa, and pumpkin... maybe a bit of cream cheese... I will report later if I come up with anything interesting and pallitable... FINGERS crossed once again.

                              Ran out Friday after reading this post and brought some coconut oil. I tasted it by itself -- not too bad. This just now, yes, yes just now I think I've come up with a liquid substitute for almond joys. I have Celestial Seasonings Sweet Coconut Thai Chai and I added 1tsp coconut oil, 1Tbsp heavy cream, 1 Splenda, and 1/4 tsp unsweetened cocoa powder. The taste is very faint but good. I think I like it! I haven't figured the carbs yet -- The tea and the coconut oil doesn't have any and the tea is decaffinated, the heavy cream is 1 carb, the splenda is 1 carb, 1Tbsp of the cocoa powder is 3 carbs so 1/4 tsp would be (3tsp = 1 Tbsp so 1 carb divided by 4 =) 0.2222222. Wow that like 2.22222...carbs

                              Somebody check my math please, but even if I round it up that's only like 3 carbs a cup, right? For me it's beneficial that it's hot and the oil gives me that "full mouth" feeling without being oily. It's not something I'll do all day long but it just satisfied my craving for almond joys.

                                OK - a definitive (sp?) OK from my for Coconut oil. I had to hunt to find the old stuff again, as I'd hidden it, thinking it belonged in the depths of the pantry behind othe stuff kitchen, rarely (if ever) used.
                                I found some other goodies in the process, which is good - such as almond oil and peppered grapeseed oil.
                                My first obeservation was (unlike my recollection) it was solid like bacon/pork grease in the fridge, almost non-odorous.
                                The heat was off and the temp. in the house got quite cool last night.

                                I did a leetle taste test - reminded me of getting suntan oil on my lips, LOL...but not so bad. It melted fast.
                                I had just boiled eggs, but also hot cabbage still steaming, so decided to add it to that instead for 2nd test. Not bad at all, didn't taste funny.
                                Test 3 was a cold tsp. of it, and it was by this time decidedly OK.

                                Labeled "American Nutraceuticals Co. - Certified Organic Virgin Coconut Oil.

                                The answers are also there - "... for medium high heat cooking...natural body care...May safely consume 1-4 tbsp per day." Other info included, expeller expressed no chemicals, no preservatives etc natural melting point 76 degrees F.

                                I hope it does also help with body fat loss!!
