Re: I can see it happening to the newbies...

Would finely ground flax work instead of soy flour (rung 6 OWL) for anyone on induction, do you think, Kevin? I have coated chicken pieces in egg/flax in the past and it was quite tasty.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Check out our Low Carb Recipes website and add to it!!

probably would be fine on them, I haven't tried it, but should work! It would have to be very finely ground.

I put the peppers right on the heat. if you have flame, even better!

I've never thought of that, sure beats using pork rines for everything! Thanks for the tip

The first two weeks I ate about the same thing every day. Third week I started experimenting! There is a huge variety of things to eat even if you stick strictly within the induction range which I will do for a long time to come most likely.

I am not one to do a lot of cooking either but it is easy to make up 3 or 4 things that will hold you all week and then just add salads with different toppings and herbs on the side.

I am loving it Wish I had never stopped it two years ago. I would have been in maintenance now I bet.

Another Newbie putting in a word or 10........
Bored? OMG no way! I have never allowed a lot of the items on this diet in my house. Sour cream, cream cheese, bacon, sausage. I haven't eaten any of this stuff in years and I'm still fat!
I'm lovin this! I love to cook, I have been trying some of Linda's recipes and tweaking them to my own taste. I've had CHEESE everyday and lost 5 lbs this week hahahahaha!
Sounds more like I've lost my mind huh? Nah just really happy.
Chef we aren't all whiny...... honest. Some of us are putting in our best effort and really appreciate all you guys and gals who have been around here for awhile helping us "newbies" out with your experience.
So I just wanted to say Thanks!
            I ate regular mayo today!

Re: I can see it happening to the newbies...

I find this post discouraging to the newbies rather then helpful. I don't post much but I read, and I have found this board is hard on newbies that ask basic questions or have normal concerns we all felt when we started. I did Atkins to the book in 2003 and became sick of the same foods. It took me a few months to get creative, and find the time to do so.

Good luck to all the newbies - may this be more to you then a resolution, may it be a lifestyle change that takes time for adjustment, takes patience for long term results, and takes education of the 2002 DANDR book. Drink your water, switch your meals up the best you can, plan ahead, and remain positive for the future of a healthier YOU!

Re: I can see it happening to the newbies...

this isn't meant to be hard on the newbies. It is meant to be a wake up.

It is amazing to me how some people read this as harsh and some read it as encouraging.

I guess it is all in how you look at it.

It was meant to be a "hey, we have all been there" kind of post, not a beat down. Also, it was meant to be realistic.

I thought I suceeded in that, but some read it as harsh.

I am not trying to be mean or harsh at all, just sharing some information. People sometimes have unrealistic expectations. Then they quit and say Atkins sucks.

People need to set realistic goals. They need to realize that there will be some effort.
Not nearly as much on this plan as on others, but yes, some effort.

I want to help the newbies out, this was not an attack.

I agree with all you just said. Posts don't show tone, so I suppose it is all in the interpretation of the reader as you suggested.

Re: I can see it happening to the newbies...

Don't they feed cattle carbs to fatten them for slaughter? Yep, they sure do, cattle ranchers caught on to that fact a long time ago.
They "finish" them by feeding them corn and other grains to "make weight."

I can honestly say, I never got tired of eating the same food, because I never ate the same food over and over again. If I cooked a roast beef on Sunday, then on Tuesday, it became roast beef "stroganoff" made with onions, mushrooms, and celery and a dollop of sour cream. On Thursday, it became shredded beef flavored with toasted sesame oil, garlic, ginger, thinly sliced onion and sweet peppers and rolled up lettuce leaf.

Same thing for a chicken: I toss a whole chicken in the slow cooker with a sliced onion and sliced celery, add water, salt, a few pepper corns, and a bay leaf. Let it cook. From that one chicken, I get chicken salad for lunch one day, chicken soup for dinner another day, and whatever chicken is leftover, I mix with a little mayonnaise form into a burger and fry in a skillet until it's all golden brown and crispy.

In between chicken and turkey, I have pork or lamb(!) or beef. Once a week I have fish or shellfish. Tonight I had a wonderful shrimp stew for supper---chopped onion, chopped celery, a chopped turnip, a bay leaf, a pinch of red pepper flakes, boil with water for 2 minutes, then added the shrimp and let them cook. The leftovers I put in the fridge and tomorrow or the next day I'll have a shrimp salad and use the leftover soup for a fish or clam chowder.

Eggs? Love them! I eat them mainly for dinner--omelettes, or scrambled. But my favorite is to take frozen spinach, defrost it, then mix it with mayonnaise and alittle parmesan cheese. Put it into a small baking dish, then make a small depression in the center and crack and egg into it. Then bake it until the egg is cooked. That with a piece of crumbled bacon is heavenly, imo---warm and satisfying and quick.

Oh, my, Megs! You just gave me a heap of culinary inspiration in that post.

The chicken burger idea just jumped off the screen at me! And so did the spinach and eggs.

                      THANK YOU!!!!!!!!!!!!!!

Megs, that spinach/mayo/parmesan/egg dish sounds wonderful, I can't wait to try it.

I can't say I'm bored with this woe. In fact, I'm loving it. I have had a couple of days when I went over on my carbs. I love salads and veggies, but on days when I didn't track I did go over. Not a huge amount, but enough to make my first morning blood sugar climb back into the 180's. Will it always be that way? Or will there come a time when my body will allow more than 20 grams of carbs without going haywire? What has been the experience of the recovered diabetics? BTW, I am back down to the 130's again, and I want that to keep going down. I want to throw out all the meds. And when I reach goal I want a tattoo.

Way to go, Chef. That was an awesome post, and just what I needed. I'm not a newbie, but I can remember how fast it was for me to lose the first time I was on Atkins. I'm back now with a vengence, though, and not bored at all. I can see the changes in my body, even though I am at a stall. I know I can kick it. Thanks again.

I have to agree with you there. That very fact led me to leave the boards for a few months. Too many times I saw a newbie criticized unnecessarily. I think sometimes people don't really realize how much words can sting when you can't see the body language to go with them. Some people really do mean well, but there are the few that hide behind the tough love excuse to tear someone down. There are some that think hey, I've got this down! If I can do it and "GET" it why can't they already. I don't believe that was truly the intent here because Chef Kevin seems to have a good reputation here. I just try to be the positive for people. It's good for them, it's good for me.
