  • What is OR was your fave induction meal?

    Just thought i would ask this question to see what kind of ideas i could get. i am sure some of the other "NEWBIES" would find it helpful too. thanks!!! michelle (will post on induction board also)

    Fauxjitas

    Grilled chicken breast ( beef or pork if you like)
    Large lettuce leaves
    avocado
    chopped green onion
    chopped green or red peppers
    lemon juice
    sour cream

    Slice the grilled chicken and squirt with lemon juice. salt and pepper. Put it in the center of a large lettuce leaf (Boston or Bibb lettuce does a good job). Put some chopped avocado, green onion, and peppers on top. Slather on some sour cream. Roll the sides of the lettuce leaf up and eat.

    Wraps
    Ground meat sauteed with onion, garlic, herbs and spices of your choice
    Lettuce leaves

    Put a few tablespoons of the cooked ground meat mixture into the lettuce leaf. Fold up the sides and eat.

    This dish is really great because you can vary the taste by varying the spices and herbs you use. Use taco seasoning or chili seasoning for "taco" wraps (and of course add on the cheese, sour cream, salsa, etc.), for a Southeast Asian flavor add ginger, soy, hot chilis and wrap, for an Italian-American flavor add basil, rosemary, parsley, oregano and parmesan or mozzarella cheese, for a "Philly cheesesteak" flavored wrap, use onions, cheddar cheese, (maybe mushrooms, if you like that). The possibilities are pretty much endless. You can also vary the ground meat: use ground chicken or turkey or even use tofu.

      Quickie

      Scallops - so cheap, easy and fast too!

      Scallops, bacon and 1/2 cup mushrooms

        I have two..omelets. I would have fallen off the wagon many a day had it not been for hearty omelet with cheese and veggies and meat.

        The other is butter sauteed mushrooms and green peppers and zuchinni with ground beef, turkey, or chicken breast. Quick too!

          Roasted Scampi with home-made mayonnaise

          Endive or Spinaches with Roquefort sauce (roquefort + cream)

          scrambled eggs with mushrooms .....

                crumbled sausage &amp; sliced mushrooms scrambled together with 3 eggs, then maybe some cheese on top.

                eat that with some small slices of tomato and I'm set

                  Take a lettuce leaf, spread some mayo, add a slice of tomato and some bacon and roll up.

                    my favorite induction meal was ALWAYS rib eye steak and broccoli both dipped in hot melted butter!
