I always have crustless quiche in the freezer, wrapped up individually. I also keep a plate of sliced cucumbers and tomatos wrapped up in the fridge. There is also a supply of string cheese. So if I have to leave quickly, I just zap in the microwave, or prepare a baggie with cheese and vegies. Works all the time, and I'm never rushed.

Just seeing how all of you have responded to helping me in this inititative is an incentive for me to continue on with Atkins - Last night I was going to fix breakfast and nuke it in the am at the office Instead I got up earlier (highly unusual) and scrambled some eggs and green peppers and Bob evans sausage before work and brought it along with me.
I am going to try the recipies and microwave cooking. I couldn't have done it without your suppoprt, and seeing your success pictures. I'm on my way once again. :icondance"tired of being pleasantly plump"
