I would give her a break. She (as most people) probably do not realize that corn starch and bread crumbs are like poison to us
At the same time I think we often are a bit uptight when we start and food issues become too big. Explain it to her at a time when you can control your emotions and it may work out. It sounds like she is trying.
I had some issues with my family but we've worked them out. Now my DH and DD are like "you cannot eat that" - they know their stuff.
