    Portion control is a very big part of everything. But I've found that 4 fluid ounces is "alot" for me. I tend to have wine with meals. So I take a sip of wine after every 2-3 bites of food. That gives me the opportunity to really taste and enjoy (hopefully!) the wine-food pairing and it allows the wine to act as a palate cleanser.

      Interesting. I find it hard to drink wine at meals. It tends to overpower the food flavors, as opposed to cleansing my palate. I do tend to choose earthy reds, so they are on the strong side to begin with...

        If the wine is overpowering the food, then the wine isn't paired properly with the food.

        for wine-food pairing you want 1 of three things to happen:
        1.the wine makes the food taste better Or
        2. the food makes the wine taste better Or
        3. the wine and the food tastes better <----this is what makes a "classic" wine-food pairing like port wine with chocolate.

        You can drink big reds with food---but it has to be a dish that will stand up to the red.

                I love booze. It's amazing I haven't touched anything now for almost a month and a half since I started Atkins. And to be honest, I really don't crave it or anything it's just hard to think of life saying NEVER you know?

                Oh we had a luncheon at work today and I was in charge of buying the hoagies, potato salad and baked beans and setting it up (cutting up the sandwiches, adding mayo, tomatoes etc).

                My mouth was kind of watering and I remembered how before Atkins I'd be shoving meat and cheese down my throat and licking my fingers while preparing it. Then eating WAY too much.

                I didn't eat anything I watched everyone else and had my little salad (with several veggies in it) and my 6 oz bison ranch steak.

                The willpower and discipline you get when you're on Atkins is truly amazing to me. I didn't feel like I was missing anything.

                    Wow Pete... your approach and your yearnings sound like me when I was in the weight loss phase. Somehow we manage to pull from hidden strength, when we want something enough... and feel strange about that, never having believed it possible.

                    I definitely see "goal" in your future!

                      EmDee you're so funny! Thanks Sally I appreciate it. There was a post on this site about the "psychology" of dieting/eating and I guess for me I'm really trying to have that success-attitude about all of this. It's the only way to do it. I mean how many times have you tried to lose weight before Atkins? Now it's really happening and I guess I have to get used to it and keep it going- a big change.

                        In an earlier post, I wrote that I discussed screw caps v corks with a member of the Deford family. The Defords own Boordy vineyards which is a major wine producer in Maryland. I brought it up because the Australians use the screw caps now. Anyhow, he said that screw caps do preserve the wine better and ensure a better product during aging and transport because there's no chance of air leaking in. But they (Boordy) don't use the screw caps because they are still traditionalists about it.

                        Depending on preparation, some chicken dishes pair well with a red, like a beaujolais, rioja, amarone or chianti. Fish dishes tend to pair with whites, particularly Chardonnays because of the cream or butter sauces used with the fish. But "meaty" fish like tuna can sometimes be paired with a red, depending on the preparation of the tuna.

                          I never knew that screw caps keep the wine better. Very interesting. However, though they may conserve the wine better, over here you only tend to find the lower quality wines with screw caps... which of course give them a bad image.

                          I often have to leave complimentary wine bottles for guests staying in our villas, and I would never be able to leave a screw cap bottle because the clients would think the company was being cheap.

                          Maybe their image will change in time.

                            Yeah that's the image screw caps have here too...unless it's an Australian wine. But recently I've seen a California vinter with a 4 pack of "mini" bottles (sort of like how Coca Cola used to market their 6 packs of bottles) of wine. They have screw caps. I think the idea is that you can bring the 4 pack with you on picnics or you can buy different 4 packs, so your guests have a variety to choose from (and you don't have to open a bottle because 1 guest wants a Chardonnay and another guest wants a Chenin blanc).

                            I often bring wine as a hostess/host gift whenever go to a dinner party, etc. We have alot of little country stores here that sell wines/liquor in the front of the store and eggs/beef/bacon/fish/veggies in the back. Whenever they clear their wine stock, they mark down bottles to as low as $3.50. I make it a point of buying one of each type, so I have something to bring.
