Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
Check out our Low Carb Recipes website and add to it!!

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
I do stuffing (in the bird) as opposed to dressing (in a casserole dish). I think stuffing has much more flavor than dressing and now that I can have fats on Atkins, stuffing is good.Originally posted by somethings gotta give View PostI would love to see a low carb stuffing recipe!!!
I made this stuffing last year. I made the low-carb stuffing bread from the link in the stuffing recipe instead of buying some chemical-laden commercial loaf. Plus I really prefer almond meal rather than the soy in commercial loaves.
- With the stuffing, I used a combo of chopped mushrooms and red/yellow/orange bell pepper rather than the green bell pepper.
- Used 1 stick of butter instead of 1 TBS of oil. I mean come on...how can you saute 9-10 cups of veggies in 1 TBS of oil???

- Used chicken/turkey broth instead of plain water.
- Adjust (lessen) salt amount if using broth and/or Better Than Bullion
- Watch the Bell's seasoning amount...I used a lot less. Add it teaspoon by teaspoon and taste after each until it has the sage-iness that you like.
It wasn't the same as my regular stuffing but it was pretty tasty.

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
I am afraid my Thanksgiving will be pretty typical. I do want to try the sugar free cranberry recipe that was posted somewhere (probably in the Canadian Thanksgiving thread). I just eat what is acceptable and the rest of the family eats everything else.
In the past, I have done a sausage stuffing. It was made with rice and some bread...not sure how that would be converted but my picky eaters are not big on stuffing so we will probably just skip it.
Dessert...I like the idea of something "pumpkin". I know I made a pumpkin cheesecake once upon a time (that I found somewhere on here).
This is my first holiday season on Atkins. Will be interesting to see how it goes.

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
We're planning on spending Thanksgiving with my inlaws in Texas. My husband's step-mother is known for being one to "take over" the kitchen on this holiday, my first with the extended family. Know what? Doesn't bother me one bit. LOL I'm going to put my feet up, enjoy the company, and bring a veggie tray and salad to accompany my slices of juicy turkey.
I'm thinking about some kind of pumpkin somethin-somethin for dessert.
Funny the holiday was always all about the food. This year it's going to be all about the company.

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
I was thinking about doing this pumpkin recipe posted in another thread.
I'm pretty sure I'll be making 'cauliflower mash potatos', and adapt that Chicken Gravy on Linda's site, to go with the turkey. Kind of wish I had just one more side, because in my opinion, thanksgiving is ALL about the side dishes. Maybe by then I'll be at the point of the diet where I can have cottage cheese.Originally posted by imagood1 View PostYou can make pumpkin desert to eat while they are eating pumpkin pie...it's easy and tastes just like the real thing - just without the crust! I have it quite often (even when it's not a holiday!)
Pumpkin Desert
Mix the following together:
1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
1 ounce cream cheese
1 ounce heavy whipping cream
cinnamon, ground ginger, ground cloves to taste (or use pumpkin pie spice)
1 Packet of Splenda
Heat in the microwave for 30 seconds - Stir. Heat another 2 minutes
Top with whipped cream
I make this with and without the cream cheese -- I like it better without it.
I just gotta figure out what kind of container that pumpkin recipe goes into.

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
My extended Family and I have recently given up cooking for most holidays and opted for a wonderful restaurant in the area for 2 holidays a year. They have one of the largest buffets I have ever seen.
Some of the food is pasta based salads and dishes, great fruit, and breads, all typical holiday fare, and wonderful desserts. But they also will have lettuce salads, turkey, salmon, veggies, beef, chicken, lamb, cold shrimp, (I plan to bring my homemade cocktail sauce). They also serve real butter, not some "spread".
I will have plenty to eat, and plenty of good choices, although I may be "a little" nostalgic for some of the food from previous Thanksgiving meals. But I know I will be able to enjoy all the great foods I can eat without more than just a glance at those "other foods".
And we will also go back to Mom's house afterward to more desserts. This time home made! I will make a crustless low carb, sugarless cheesecake, and possibly a second dessert if I find a good recipe.
=Yes, this is supposed to be a cooked turkey

Re: Okay Ladies and Gents...it's time to think about Thanksgiving
Sugar free cranberry relish: 2 bags fresh, raw cranberries, 2 oranges, including the peel. A dash of allspice and grind in a food processor to the texture you like. I know some who put celery in it. It's not for induction, but for OWL or Pre-M.
Pumpkin pie, you can substitute Splenda for the sugar, 1:1 ratio. Pour and bake it into custard dishes instead of a pie. Add an extra egg for a lighter, more souffle type dessert.
Even when I was not doing Atkins, I always saved my calories for actual Thanksgiving food. I didn't get the mashed potatoes, corn or green beans or rolls, because you can eat those any time. Turkey, stuffing, cranberries and pumpkin pie. And sweet potatoes, if they are fresh-baked.
This year, I'll do the same as I did the first year I started--turkey, green beans, a bite of stuffing with a drop of gravy, fresh cranberries and the pumpkin with splenda and no crust. The stuffing/gravy is totally off-plan, but my MIL makes traditional, browned cream gravy that is fabulous, so I have a tiny portion anyway. She is 80, and the 2 of us do all the cooking for 20. It's the one real indulgence of the day! We always go for a long walk ( a mile at least) after we eat, so at least it starts metabolizing right away.
eta: that last part sure sounds like a feeble attempt to justify cheating. So be it.
