  • New Veggies To Me

    I know this will amuse some of you, but my DH and I discovered fennel today. I've noticed fennel in the produce aisle and many times thought, "Oh how pretty." LOL Really prior to Atkins my vegetable choices were slim... potatoes, onions, carrots, peppers. That's about it. Funny how one fear I had of doing Atkins was boredom... yet my dietary choices prior to Atkins were hardly what one would call varied!

    Anyhow we sliced the fennel and an onion, sauted in EVOO and butter till carmelized, added cream, salt and pepper... served with sauted filet of flounder cooked in the same pan. Next time I want to add cheese for gratin of fennel.

    What are some vegetables you've tried since doing Atkins that turned out to be a pleasant surprise?

    Hi! I used to be the exact same way, my veggie choices used to be just a few and mostly starches. I haven't tried fennel yet, but I will give it try!
    A veggie that I have found out since doing Atkins and found to be a pleasant surprise is Leaf Lettuce. I know it sounds crazy but I had never tried it until Atkins. I always thought Iceberg was the way to go when it came to lettuce. I was wrong, lol! I also have a spaghetti squash in the fridge right now (I haven't cooked it yet) and I am sure I will enjoy that also. I have never tried spaghetti squash either. Veggies never tasted so good until now!!

        My family (Mom and sister, BIL, niece, etc) have followed my weight loss so far, with some reservations, still questioning why I can't have a banana right now or "just that one little whatever"...LOL...Overall they have been pretty supportive. (DH and sons are 100% OK with ATKINS and actually follow their own Atkins based low carb way of eating).

        So anyway, knowing in the past---- I could devour chocolate, snacks, desserts, and goodies as well as the next guy -----they now think I have gone completely crazy.

        Why? Because my NEW craving/comfort food is....Sliced Onions and Sliced Radishes fried up in Butter! Yep, Think about it every day. Funny thing is, up until Atkins, I never ate a radish! I used to pick them out of a salad at a restaurant. Now I could almost eat those "Fried Radishes" every day. (Although I don't.)

          This WoE has introduced me to kale (very earthy; I like it sautéed with garlic, butter and lemon) and spaghetti squash (good, if a bit lengthy to prepare). On the fruit side, I was introduced to chayote - a really good, low-carb substitute for potato chunks in soup!

            Jicama is really my only "new" veggie.

            Funny, I was in the grocery store today looking at veggies I don't recognize trying to figure out what they were based on the store's tags...I am a lot more interested in trying new veggies out (but first I have to figure out if they are on "the list" )

                Wow Julie!!! What a difference in your photos! You look 20 yrs younger...and so thin! Great job!!!

                As far as veggies, I just eat more in general for sure. I have also started eating squash. I like spaghetti squash a lot and have been eating butternut lately (need to change my siggy...I made it thru all the rungs).

                    And some of them do not even know the difference between a cucumber and a zucchini.

                      Oh my goodness this happens to me all the time! I love the looks especially when buying jicama... they look at me like, "Are you seriously gonna eat this???" ROFL

                      Thanks everyone these are great posts! I'm definitely going to try kohlrabi, chayote and kale... haven't ventured there yet. This is exactly what I was looking for, more ideas! Still wowed by the fennel, but this is cool, very cool.

                        There has been a few
                        chayote - that is a cool one
                        acorn squash (rung I kind of love it (with splenda on it )
                        cauliflower - not a new one but boy it has some many applications that it feels new
                        sea weed (run 1) I found I like it in miso soup

                            I would be hard pressed to come up with too many veggies I haven't already had before, but one of my faves that not too many people eat is beet greens (beet tops)... steamed very lightly, which only takes a couple of minutes, literally, and they wilt down A LOT, but cooked very lightly with a little butter and lemon juice is SO MUCH BETTER than spinach or any other cooked green I have ever had. If I was eating beets themselves right now, I would cook them the same way (though they take a little longer steaming time) and serve them on top of the bed of steamed beet greens. About my favorite vegetable dish.

                            I love chayote, but haven't been fixing it. Like jicama raw in a salad. Like kohlrabi, love bok choy in a salad. Like jerusalem artichokes.

                            Only veg I can't truly recommend is oriental bitter melon... it does live up to its name, LOL! I've eaten it a few times, out of curiosity more than anything, but wouldn't certainly go out of my way for it. Which is okay, since you hardly see it for sale anywhere very often. You have to really work to make it mostly palatable, at least to me. I have had edible flowers numerous times in salads or whatnots, and other than the fact that they are pretty, I can't say they did much for me either.
