    In addition to what everyone else has posted I could not do without my electric egg boiler (cooks 7 eggs at a time) and my hand wisker. It is one of those oldfashioned ones where all you do it push down on the handle and realease to get it wizzing around. Ideal for wisking up one egg white to make a microwaved revolution roll 'bun'

      My bestest friend in the whole wide world... my dear food processor!!! It took me years to be convienced that I "Needed" it and finally I spent $114 for it and guess what. I love it. I could not live without it I believe. I use it almost daily ..... I can
      Chop onions,
      slice red and green peppers
      grate cabbage,
      shread cauliflower, cheese, zuccinni
      chop nuts
      puree fresh tomatoes to add to soups, etc

      And for the rest of the family
      Slice potatoes
      Shread carrots
      Mix a carrot cake in it! No Joke
      Last but not least... Can even knead bread with it!!!

        I adore my Thermomix... it does fantastic soups, grinds almonds to perfection, pulverises parmesan, cooks stews, steam cooks fish beautifully, makes foolproof hollandaise, mayonnaise...
        Of course I also use it to cook for the rest of my family who don't do Atkins... and that's what it exels at (risottos and polenta and stuff), but even for low carb cooking it's terrific. This machine chops, grinds, emulsifies, cooks, weighs... and at the end of it all, it cleans itself!

        It's a German machine which is sold "tupperware fashion", at your home. Never breaks down... lasts for years. Hideously expensive (so much so it took me eight years to finally go ahead and get one) and very hard to get in the States (something to do with the power) but uber popular in Spain, Germany and Italy. I adore in inbuilt scales...

          I am fairly low-tech, myself, and don't really even like to use a microwave if I can avoid it. The things I use with regularity are...

          1 - good paring knife and larger chef's knife
          2 - a large "greenpan" (non-teflon) non-stick skillet that can go stovetop or oven
          3 - large, medium and small size saucepans
          4 - a veggie peeler
          5 - a xyliss garlic press
          6 - dishes with tops for carrying packed lunches
          7 - ziptop bags (ugh, plastic, but handy nonetheless) for carrying snack foods - I rinse these out and reuse over and over if they hold only something like almonds
          8 - one good spatula, one whisk, a couple each of slotted and solid serving spoons
          9 - cutting board that won't dull your knives
          10 - pepper grinder - fresh ground has SO much more flavor to me

          I have other things in the kitchen, but use them only rarely. Used to use an OXO salad spinner quite a bit, but not currently. Works pretty well though.

            I adore my Thermomix...
            What a fascinating appliance, I'd never heard of it before.

            Other than the regular kitchen stuff, the One thing I have and use constantly, is my Braun coffee grinder that I use for Flax Seeds. I keep the hopper filled with seed, and grind what I need. The seed stores much better than the meal, which means no waste.

            I do use my salad spinner regularly, mainly for fresh spinach which is always loaded with dirt.

            And after hearing everyones raving about an egg cooker, I guess I'm going to get one. No matter how careful I am when cooking them, and doing it by the book, half the time they don't peel worth a darn.

              Whether an egg peels well or not has a lot to do with how fresh or how old it is... the fresher it is, the less well it will peel. Buy an eggstra dozen and let them sit in the fridge for a week and then cook them - they will peel much better. When I am eating boiled eggs regularly, which ain't often, I keep a carton extra all the time for this purpose (to let them sit before needing to cook them later on that week).

                      My favorite, most used things are:

                      - Mandolin slicer - i use it every day for slicing vegetables
                      - Pressure cooker
                      -microwave
                      -Crockpot
                      -cast iron frying pan
                      -good sharp knives
                      -cutting boards in different sizes/materials - best is the really small plastic one
                      -timer
                      -toaster oven 4 quick baking
                      -food processor
                      -My currently dead stick blender, shopping around 4 a new one at a good price... this may take a while...great versatile tool

                        WOW SALLY > i just read about the Thermomix .....what a really cooool machine. I think they sell it out here but i'm sure it's beyond expensive. maybe i'll start saving 4 this... what an amazing gadget...i can think of so many ways 2 use it just off the top of my head...sounds fabulous, thanks 4 posting about it!

                          Yes it's really cool... When the demonstrator came to show me the machine, in just an hour we made (for the family... not cooking Atkins): a bread dough (left rising while we made other things), a cake batter (which we popped in the oven), custard, mayonnaise, a tomato sauce for pasta and an omlette (cooked on top of the pasta). It was amazing and a lot of fun. Cost is verrrrrrry high (nearly 1000 euros), which is why I waited for years before getting it... but I don't regret it a bit.

                          They sell them in Canada and lots of people in the US get them from there.

                            I have Vitamix envy!! I almost bought one. But couldn't justify spending the $$. I got a really nice blender by Kitchenaide that seems to be a wannabe vitamix LOL.

                                I have two cast iron French Ovens with covers in two sizes. It is my "go to" pot when I'm making stews, roasts, soups or just about anything. I also use my wok several times a week whether stir frying a meal or just a veggie side dish. I could probably live without them, but I think they make me a better cook.
