    Hmm... I don't know. I've been doing a little research on jicama, because I've been toying with the idea of growing my own. From what I have read, jicama is available year-round from tropical America. (here is one of the places I saw this: Jicama Potato)

    I don't know about the rest of the country, but here in Louisiana, I think I am getting the real deal... meaning, I think they're from south of the border, and not grown artificially. Either way, they sure haven't been very good in the last 2 weeks.

      Well the guy said they usually come from Mexico, but now they have to get them from So America because of the growing season. Maybe he was making up a story to keep me happy since they were out of stock! LOL

      I didn't mean that they are all grown artificially, I was just wondering if maybe some were, and that was why they were not tasty. Wondering why we both have noticed a blah taste lately....

        Yep I tried mine raw and it was pretty bland too. Not what I was expecting at all. Maybe I'll try it again later. This was one ugly jicima. Maybe it just wasn't a good one LOL

          I live about 6 rock throws from the Mexican border, and I've never heard of jicama being called anything else.
          Squeeze lime over it and munch away. Yumm!

            Was back at the store today and on a whim thought I'd check for more jicama. Imagine my shock when I saw about a dozen of the pretty smooth almost white jicamas like they show in the pics. Small 1/2lb ones. I bought one and I'll try it. Bet it tastes better than my scary jicama I bought last week.

                Anyone know how to bake it? DS said one of the kids in his foods class in school (advanced cooking class) eat jicama baked and it's yummy. He didn't ask how he cooked it though.

                  Atkins Friends Recipe Room - Baked Jicama Dessert

                  Baked Jicama Dessert
                  Recipe By ottie

                  3 cups jicama -- very thinly sliced
                  4 packets artificial sweetener
                  1/2 teaspoon ground cinnamon
                  6 tablespoons butter -- cut into small pieces
                  1/2 teaspoon apple pie spice





                  Preheat oven to 350. Spray a small (8 or 9") pie pan liberally with butter
                  flavored cooking spray. Arrange 1/3 of the jicama slices in the bottom of the pir tin. Sprinkle with 1pkt sweetener and 1/3 of the spices. Top w/2T of the butter pieces. Repeat
                  for 2 more layers. Cover with foil and nake for 15 minutes. Uncover and bake 15 minutes more. Serve warm with low-carb ice cream! (cinnamon in the ice cream is
                  wonderful on this). If you have the DaVincis s/f caramel syrup -drizzle 1T over each layer of the 'tart' as you assemble it -delish!

                    I wonder if those are net carbs, they do not show the fiber.

                    There are TONS of fiber in Jicama, so I am really skeptical about the carb counts, etc, without actually looking it up.

                    And then there is the question, weigh it or stuff it in a cup...

                    1 cup Jicama = 130 g.

                    1 cup = 130 grams = 4.58 ounces weighed. (According to the carb link on the ADBB.)

                    I think weighed you come out ahead of stuffing it in a cup.

                    Is it one serving, 2??? More. Sounds like a lot of Splenda as well. I use NO Splenda when I fry it in butter and add cinnamon.

                    Oh LOL and serve with ice cream...this sounds like a big carby dilemma!!!

                      Maybe serve it with a dollop of whipped cream if you did not want to spend time making an induction-legal ice cream?
