  • What are you having for Easter?

    Around my house Easter is as bad as Christmas, actually worse Atkins-wise...Cream of carrot soup, salad with balsamic/olive oil dressing, Maple glazed ham with pears and cloves, scalloped potatoes, asparagus with butter (well, that one's ok) and carrot cake with cream cheese frosting...How many things are wrong with this picture?!?!?

    So, what are YOU gonna have? I am thinking of adding deviled eggs to the above so I can eat those and not feel deprived!

      Prime rib, asparagus hollandaise, deviled eggs, cucumber salad, and some other things that I won't eat but my family will.

      Edited to add: obviously, a serving of hollandaise for me will be a tablespoon or two. lol

        I've been asked to bring au gratin potatoes and my sought after homemade rolls. I'll take both.

        I'll probably also take celery with cream cheese and double check to see if someone is going to bring a veggie tray and cheese and cracker plate. Luckily, my mom has always preferred the plainest ham she can find vs. the spiral sliced ones dripping with sugar. Between ham, cheese, veggies and celery, I think I can make do.

        If I am feeling especially industrious, I may take a stab at making some sugar-free fudge. I made the real stuff at Christmas and two diabetic relatives asked if I could someday make sugar-free. I haven't faced any cravings yet, but I don't want to tempt fate and smell fresh pies and get a sudden urge and be unprepared!

        Something pumpkin also sounds good. I am thinking of making heavy whipped cream, canned pumpkin, pumpkin pie spice and splenda together to make a fluff. Could be eaten like pudding, and I could take graham crackers for everyone else to eat more like a spread or dip. Yum! I can't wait to see if I can make it work!

          That sounds divine! I just love anything pumpkin, but never think about it once spring gets here! it's so associated with fall for me!

            I found this recipe. Substitute heavy whipped cream for the cool whip, and sugar free vanilla pudding and voila!

              It's usually just me, the kids and my parents (dh has to work weekends) and maybe my brother, sister and her DS. I think we'll do something casual like a BBQ. A nice grilled steak, salad and maybe some cottage cheese or deviled eggs sounds good to me. Everyone will enjoy it so I won't have to make 2 meals. I'll have candy out, maybe potato salad and a few other items I won't be eating but I'm sure I won't feel deprived at all since I'll be having my favorites already.

                Hi,
                How much heavy cream do you think you will use, 16 oz? I am wondering what the yield is. I mean, if you use 16 oz of cream to start, it of course increases in volume. So will it become the same as a container of Cool Whip or more? I have made whipped cream, but didn't figure how much it makes after whipping.
                I thought I read somewhere once that 8 oz of cream would produce 16 oz of finished product.
                Just curious. Thanks.

                  Guidelines for heavy cream say it doubles when whipped - so yes, 8 ounces should be enough for the recipe.

                    I am so behind on this. I have a somewhat sorta planned out menu but not finalized.

                    Prime Rib- Oh how I love Prime Rib
                    Roasted Asparagus
                    Roasted Brussel Sprouts
                    Baked Potatoes- for the family. By Sunday I should be on the Potatoe rung so if I want a bite I can have a small bite but honestly don't really even want it.


                    Other than that I don't know what else yet.

                    129- So I can say I am in the 120s- Met 3/29/10 128.7lbs yay

                        For me it will be boiled eggs and ham (though I have to be careful about the ham) two foods I can eat in excess and not worry about the plan!

                          I'm still working on my Easter menu. So far:

                          Easter eggs (colored, decorated hard boiled eggs), radish fries with bacon in it for breakfast.

                          Lower sodium baked ham. This year I'm trying George Stella's recipe for baked ham with low carb maple bourbon glaze. I am following a reviewer's suggestion of only using 1/4 c. of Splenda.

                          Asparagus with homemade Hollandaise sauce. Maybe some leftover cabbage & onion from Saturday's fresh kielbasa. Not sure about other veggies.

                          Blueberry wine.

                          As Italian ricotta pie and lemon meringue pie were traditional Easter fare for us, this year I'm trying a low carb lemon ricotta pie with LC lemon curd topping. The best of both in one dessert!

                            Maybe I'll go ahead and move onto rung 4. Been on 3 quite a while. Then I can pick up some strawberries and whip up some cream for an Easter treat. Can pick up some shortbread cakes for everyone else.

                              Thank you for sharing the Lemon Ricotta pie recipe..and the lemon curd recipe...I think it makes a great breakfast myself.. but then I love ricotta cheese and lemon...
