  • Flax meal bread

    Things seem to be continuing well - really well in fact - but two questions. Does anyone else have trouble sleeping during the induction phase? And has anyone tried using flax meal to make bread? According to a pretty interesting low carb site, you can make a kind of focaccia bun using flax meal and it has like 1 net carb - and, of course, a pile of fibre. Sounds very cool if it is real.

    If it IS good, I'll happily forward the recipe I have.

    P.S/ Since I'm eating a lot of rabbit food, I suggested to significant others that last night we eat rabbit. This did not go over well. Go figure!

    I've been making that recipe about once a week. I think it's rather good. I use the golden flax meal, if that makes any difference. I think it tastes best warm out of the oven or toasted.

    There are also smaller versions of the recipe called 'muffin in a minute' which are versatile. Just search for those here and you'll find lots of recipes. Yesterday I made one of these with cinnamon and splenda and cooked it on a skillet like pancake, then I smothered in cream cheese, for an Atkins friendly treat.

    Make sure you drink extra water when eating flax!!

        I have made the Muffin in a Minute, , but never thought about making it like a pancake. I'll have to try that!
        I also put a pinch of salt in the recipe.

          I omit any sweetener from the flax muffin recipes and spread the 'batter' out into a big circle on the microwave turntable to cook, then cut into 4 quarter slices for sandwiches or as toast under a poached or fried egg! Sometimes I even use it as a pizza base too.

          Or for burger buns put the batter into a 3" - 4" dish.

          With my microwave it takes 3-4 minutes to cook.

            Warm out of the oven it almost tastes like a corn muffin with golden flax. I love it. We cut ours up and put it in the fridge, and it lasts us most of the week in small pieces

              Eizellen, what a great idea! I am going to try one of these buns, I am guessing I could just use a cereal-size bowl to prepare.

                You can also get a muffin top pan and bake them to make buns

                  How would these do cooked up like pita chips? Maybe thinning them out on a cookie sheet and baking them. Maybe making some spinach dip to eat with them?

                    That should work if you spread it thinly enough.
                    Or maybe make it a bit more liquid (my version I use 2 eggs plus 2 Tablespoons of water with 1/4 cup ground flax + 1/2 teaspoon baking powder so it is fairly runny and would spread out nicely I think)
                    Maybe if you baked a sheet of it then when nearly done you scored and broke it into chip shapes then turned it over to finish cooking upside down to crisp up the other side it would end up with a more 'chip-like' texture.

                      Maybe you could try Meg's Flax Crackers. The recipe is for one serving so it's a good way to try them out without wasting a lot of ingredients or time if they're not your cup of tea.
