food journaling is very helpful not only in finding carb creep if you allow it but recognizing a triggering food is so much easier if you know what you had the last time this happened too and our memories get a little fuzzy about that and how much we had of something on what day when we don't log it

I freeze my raw almonds and walnuts and then measure a serving and fix them how my tastebuds want them roasted chillies salted whatever so it slows the geting to the nuts and the eating part. some times when i need a good crunch i just have them frozen. sure beats the heck out of a handful of chips for a crunch.

Starting on June 4, we will begin reading the book that we follow, Dr. Atkins New Diet Revolution or DANDR, for short. The read is open to all members, induction to maintenance phases. Since we all follow this WOE, it is a worthwhile read for the next 5 weeks.

This is how the read will be conducted:

June 4 , week one, read part one .
June 11, week two, read part two.
June 18, week three, read part three.
June 25, week four, read part four.
July 2, week five, read part five.
Part 5 is the Food and Recipe section. This will fall directly on your July 4th plans (for our U.S. members) and serve as a perfect opportunity to try out some of the recipes.

We have two of our best experts, not2late and 2big4myxize, that have agreed to answer questions that will come up. Because duplicate questions are bound to be asked, our two experts will use their best judgment on how to tackle the questions. They may choose to let a couple pages pass before actually addressing any one question.

Questions should be asked and answered in this thread. You can ask questions at any time but it would be helpful to ask questions pertaining to the part we are in.

Keeping a food journal helps me tremendously. I try to write down every bite that I eat... including how many tsp of mayo are on my tuna. If it's there in black and white I can't fool myself how much I really ate. We don't think we eat that much, but to see it all written out can be eye-opening.

i agree, christy! like what i ate today!
like i said, i wasn't a big fan of fit day before but now it's second nature. i am getting dependent on seeing the totals as much as i am looking at the list of food i ate.

we are talking alot here. does anybody have any questions that 2big or megs can answer?

somebody in an induction topic thought that the cheese list in chapter 11 was the only cheese you could eat and not a suggestive list of types of full fat aged cheeses everybody here knows they can eat any full fat aged cheese as long as any added stuff is also legal like dill havarti or brie. that word including just before the list in chapter 11 doesn't say only or limited to the following.

I have a question, rather asking for advice. I have an incredibly hard time eating enough. I'm physically active and do notdeny myself. I try to approach my meals with good ratios in mind, but at the end of the day I can't seem to get my carbs on a steady increase, as well as my calories. I "started" owl a few weeks ago, but it's a rare event when my carbs are above 20-25. I love doing different veggies, but my appetite just isn't there. I try to have veggies with every meal, and get the fiber in also to keep things moving. I've also noticed that I haven't wanted protein as much as usual. I don't know if that's related, but my question is how in the heck do I progress? I think I have a decent hold on what to do, i just can't seem to do it. Have you found yourself unable to get out of induction, or move on to whatever you were moving on to? I want to find my ACE/CCLL and move on and maintain and so on. I need to lower my fat and keep my protein up. Induction is too easy, lol.

cook the veggies down some tomotoes, red peppers, mushrooms all make great sauces just to name a few.
add onions garlic leeks mushrooms or any other veggie to a pan you are cooking your meat in and purree them when done with the pan drippings for gravey. move up a rung to the fresh dairy level and get your carbs in some yummy yogurt or low carb milk or cottage cheese and make some new to your Atkins dishes.

then move up to the nuts and seeds rung it takes very few nuts to add a bunchj of carbs to your total.

                  happy low carbing.

pick higher carb veggies from the list like pumpkin instead of lettue.

make soup and puree your veggies

                    You're the best
I think the pureeing and adding to the pot/pan are the first things I will do. I actually bought cottage and goat cheeses today, to motivate myself. I've been integrating the higher carb veg. I love squash, and peppers, and pretty much all the others, lol. I did find out that pumpkin, incidentally, makes my reflux act up. I had some the other day and a little while later i had the burn. I tried again the next day and same thing. Hadn't had any burn since i started so it was definitely a sign. I'm enthusiastic about the rungs. I do love food- preparing as well as eating it.

2big, about that gravy you mentioned in your last post. Are those ingredients good as far as thickening this gravy? I've been trying to do things almost similar to this, but I'd like a thicker gravy/sauce. Any suggestions?

Maybe add some cream as well which I find thickens it up a little.
Wondering how to get 'most' of your net carbs from your induction veggies?

if your drippins have enough veggies they will get anywhere from tomato sauce coming out of the can to tomatopaste comeing out of the can. if you just want gravy Dr Atkins has a sourcream one that just adds sour cream to the pan to deglaze it whick thickens as it cools.

or you can get some zanthum gum and put it in a salt shaker and sprinkle some in the deglazed cooking pot as you stir and it will thicken up. a little bit will go a long way and too much goes gummey

You could either use a gum thickener or you could try the Indian technique: puree the vegetables raw then cook it with the meat . You'll find that you might need to add water or broth to thin the pan gravy out, during the cooking. Plus the meat will be more infused with the flavors of the onion and celery or whatever you're using.

That recipe for pan gravy sound so good, I have to try it. There are so many smart people on this board. I am happy to be here.

I need to take a minute to admit that I have never read the whole book before. I just learned what I needed to do the woe and skipped around to find bits and pieces of information after that. Reading Part 2 has really opened my eyes.

The strategies for eating on vacation came at a good time since we will be going at the end of July and I like the idea of drawing the line when it comes to weight gain after goal. Speaking of which, I have chosed 140 lb for my goal, but Dr Atkins said to chose a weight where you felt and looked the best in your life, (pg. 155 in my copy). That weight for me was 130 and with my large bone structure, a size 10. I am wondering if I should aim for that again at the age I am now. I was in my 20s and 30s when I weighed that and am 53 now.

                              Thanks,

Terry, I'm 2 sizes away from my goal dress size. I've always had a very open view about this. If I'm happy with size 10 Megs, I'll scream "GOAL!" when I get there. If not, I'll push my way to a size 8 Megs.
