    Where did you find the recipe? Sounds yummy but be honest, we they hard to cook. On a scale from 1-10, 1 being boiling water easy, 10 being beef wellington difficult, what are they? LOL!

      Fatactress - working is a good thing! There's no real recipe for the veg soup, I just browned it all a little to get it carmelized a bit and added chicken broth, some chili powder (like 1 teaspoon), about 1 Tb of tomato paste and that's about it!

      The Asparations veg was incredible! Way better than broccoli, not quite as sweet as asparagus. The pumpkin I cooked last night was also far superior to the canned variety which I O.D.'d on a year ago!

      Everyone is doing a really great job at this!

      I'm in at 23 today with mushrooms/3 cherry tomatoes, veg soup, asparation and pumpkin.
      Okay the soup sounds easy! Kinda how I used to make "cabbage soup". I'd brown the veggies in butter, add chicken broth, some mrs. dash and tabasco (I like spicy) and garnish with a little green onion and cilantro. Hmmm...I may have to make that soon! LOL! Tonight I made a wonderful little "goulash" with hamburger meat, zuccini, green beans, mushrooms and cilantro. Garnished with shredded cheddar and a little dollop of sour cream-YUMMO!!!! And it really helped me get my veggies! I have leftovers too! LOVIN' THIS CHALLENGE!!!!

        Well, I've never made beef wellington, and I'm a good basic cook, but not much into really fancy stuff. I thought it was really easy. I got it on Linda's web site.

        I got frozen cauliflower, stuck it in a bowl with about quarter cup of water and cooked it for 10 minutes in the microwave. I cooked 4 pieces of bacon in a skillet--Linda says add onion and brown with it, but I can't eat onions without pain. I took the cauliflower and grated it into little shreds, cut up the bacon, threw the cauliflower in the skillet with some butter and browned it all together. It'd probably be good to add some cheese at the last minute, too.

        So, I'd say maybe a 3!

            Delicious looking soup Silly!
            And delicious looking beans Mitzi!

            Yesterday I got in 22 g veggie carbs with: Lettuce (canasta), fennel, cherry tomatoes, eggplant, spinach, leftover broccoli.

                ok, more about this baking spag squash unsliced thing... sounds fabulous! how long and at what temp do you bake it?? I cut it in half and put it in a greased pan for 45 min at 350...

                  okay those green beans looked good, i just know i never liked the taste of them, anyways, i'm gonna be brave and if they have some today i'll get them, if not i'll find something else that ive never had, will be hard cos i think ive tried most things!!

                    VEGGIE CHALLENGE DAY 3: (12-15g)

                    1/3 cup broccoli
                    cup lettuce
                    small tomato
                    cup green beans
                    celery

                    I went a bought some turnips today for tomorrow night's dinner - I have never tried them before and have no idea what they taste like. There is a recipe for making turnip fries in the back of DANDR so I think I will give that a go.

                        I used to hate spaghetti squash as well, but now I enjoy it very much!

                        Mitzi, .88 cup pumpkin? That made me laugh!

                        Veggie facts for today:

                        The eggplant we enjoy today originated as a spiny plant with bitter fruit in India. It gets its name from the early fruit which was small, white, round and resembled eggs. Because eggplants belong to the nightshade family, in early years it was believed to cause madness in people who ate the fruit.

                        Pumpkins are members of the family cucurbitaceae which include the other vine crops; melons, cucumbers, and squash. They are native to the New World and have been cultivated by Native Americans for centuries. They are grown primarily for their use as jack-O-lanterns at Halloween and in pumpkin pies at Thanksgiving.

                        and check out this little tidbit about pumpkins:
                        Canned “pumpkin” pie filling is often a type of squash and not really pumpkin at all.

                          Mitzi, those are the best looking plate of beans I've ever seen! I'm gonna go out and find some fresh green beans today!!!! WOW!!!

                          Yesterday, I had 19 net grams of carbs with the following veggies: red bell peppers, mushrooms, broccoli, spinach, cauliflower, yellow squash, and zuchhini.

                          As a time saver, I wash and chop up my veggies ahead of time and store them away in those glass pyrex containers. I have the peppers and squashes in one, broccoli in another, and cauliflower in a third. That way, I have no excuses to not eat them! I also made a broccoli-cauliflower "salad" with some shredded cheese, mayo, and sweetened with a little bit of splenda. It's also in a pyrex container. Easy to scoop out when I'm a little hungry for a healthy snack.

                            LOL... I have a slight case of OCD (obsessive complulsive disorder)... can you tell?

                            I use canned pumpkin, and I got that figure from taking the serving size and multiplying it times the number of servings in the can, then dividing by two since I eat half of the can at the time.

                            I've never eaten fresh pumpkin before - I wouldn't know what kind to choose or what to do with it. This would certainly be the time of year to give it a go!

                              I ate all my veggies yesterday! 17 net carbs (OWL). I had pumpkin for breakfast, ratatouille at lunch and lettuce and tomato at dinner.

                              I'm off to a good start today. I scrambled some of the leftover ratatouille with my eggs this morning and it was delicious. I thought the eggs and ratatouille together were much better than either of them alone. I have to run to the store later for more canned pumpkin (I'm loving that stuff!) and my 'new' vegetable, jicama. I haven't decided how I'm going to prepare that - suggestions are welcome.

                                Mitzi - you need to try real pumpkin. I was shocked at the yummy difference. It's the same as any squash, cut in 1/2 (or not) and bake (or nuke). It was even kind of creamy. It was goooooooood!

                                Mary - doing great! Some people fry jicama like potatoes. I just think it's great raw. let us know if you like it!
