      Silly, I have a question - Are you trying to limit your net veggie carbs to 25 since the requirement for maintenance is 22 - 25, or are you just trying to stay under your CCLL? While I did note that there was a range stated for each phase, rather than just a minimum number, it never occured to me to limit net veggie carbs, as long as I was not going over my CCLL. I am going to have more than 25 at the end of today.

        19 net carbs for me today

        consisting of:

        3 cups of brocolli
        3 cups of mushrooms
        1/2 an onion
        1 small tomato


        im seriously veggied out. need to try and find something higher in carbs cos i cannot eat that many vegatables again!

          OK I got in 6 more net carbs with my salad and green beans tonight.

          Salad was 2 cups greens, onion, tomatoe, pepper, celery and cukes


          Like EMma I gotta find higher carb veggies for tomorrow because I felt like I ate way too much today! I'm trusting everyone whos done this and says you can't gain from too many veggies!

          so today my net carbs was 18

            Day 1 veggie challenge: 12-15g net carbs

            1 small tomato - 3g
            1/2 cup mushrooms - 1g
            1/2 cup green beans - 3g
            1 small zucchini - 3g
            1/2 cup red capsicum (red pepper) - 3g

            DAILY TOTAL - 13g

            Too easy!! My only problem will be finding a veggie I haven't tried.

              Woo hoo you guys!

              Mitzi, you can go over your range as long as your carbs are still withinin your personal range. I would think that would make the rest of your percentages off, if you're into percentage keeping. For purposes here, you need to be in the specified veg range for your phase.

              Joy is an example of that. She's been tweaking her diet to suit her body and she put in for 30-35 veg carbs a day.

                Here's a veggie soup I made for lunches this week. I even bought more okra to put in it. I tried okra last week, not so fond of it, but jimmie told me to try it in a soup or stew!

                It's got all fresh:
                cabbage
                onion
                diced tomatoes
                green beans
                okra
                celery
                Fresh herbs from my yard and spices

                      Found my new veggie...well..new for me! I cooked up Kale with butter...Deelish! Just the Kale gave me 14 carbs! I got another 4 carbs from red peppers in a green salad!

                            Got you all to here and Guek, I bought Kale at the store, will make it tomorrow. It's full of antioxidants!


                            Here's a few veggie facts from the wisconsin fresh market vegetable growers assn:

                            Asparagus is derived from the Greek word Asparagos which means “sprout” or “shoot”. It is referred to as the aristocrat of vegetables and is considered a harbinger of spring because of its earliness.

                            The first spinach was cultivated in Persia 2000 years ago and became popular in Italian and French cooking in the Middle Ages. Spinach contains oxalic acid and may prevent the absorption of calcium if eaten in large quantities

                            The Indians of Mexico and Central America have used both sweet and hot peppers as far back as 5000 B.C. Although they are unrelated to the peppercorns from which black pepper is derived, they received their name from Spanish explorers landed in the New World in search of peppercorns. Sweet bell peppers lack the capsaicin that gives hot peppers their pungency. They may be harvested green or allowed to ripen to yellow or red.
