    Hi Silly, put me down too.. almost forgot it. I'm on Owl. I'm thinking I'll try that eggplant. I've never had it, or cooked it either. Anyone have any suggestions?

      Running to catch the bus.... !!! Phew! I'm in too. Maintenance. Will scour the supermarket shelves for a new veggie and report as and when I find one... or try cooked grass (mine needs cutting!! )

        Ok Mickkey and Sally, got you both down!

        Mickkey, I love eggplant. I just slice it, drizzle with olive oil and roast in the oven until browned. or, you could fry it in a pan too. Or, you can cook it, mash it with garlic and olive oil and that's really good too! IMHO, eggplant is one of those things either you love it, or you hate it. I'm sure others have recipes for it as well.

                So, Harris Teeter didn't have rhubarb. Is it out of season??? I found though, that I bought jicama about two weeks ago and never used it. (Went shopping and found it hiding in the veggie crisper). So it's been elected as my official "new veggie" for that part of this challenge.

                The sticker on it says to peel and eat with dips. Can anyone help out with how to go about preparing it or which ways it tastes best? You can pm me so we don't thread hijack.

                  One more thing. I don't use fitday all that often. I only use it when I get in a stall to check percents--so I need like, FITDAY FOR DUMMIES to explain how all the totals and % get seperated.

                  For this challenge am I only putting in the veggies I consume or everything?

                    Practice makes perfect you guys! I didn't do so hot myself this week!

                    Meena - I made a new fitday only for my veggie challenge last time. I'll use it again for this one, it helped me alot in keeping the net carbs right!

                    Also, someone correct me if I'm wrong, but I think Rhubarb is not to be eaten raw, must be cooked.

                      for the days of the challenge, i only log the veggies. that gives me the total carbs, fiber count and net veg. carbs . i have found from doing fitday so long that if my veggies are right, pretty much everything falls into place.

                        are you asking atkins wise or eating it raw in general? personally, i can't stand the stuff.

                        in general, it can be eaten raw. jack use to eat it like that all the time. blech.

                          Isn't it very bitter, therefore people make it into dessert?

                          Oh and DUH! I can use my regular fitday and not log other food, good idea! Last time I was doing both.

                            I'm in fitday now and I logged 7 veggie carbs with 2 cups of salad and a cup of cabbage.

                            This will be tougher than I thought but I'll keep at it and I'm sure by Monday it'll all fall into place.

                              That's what I'm getting from around the board. Most people say it needs to be sweetened so that's out cause I use two packets of Splenda for coffee in the morning. Any more than that makes the scale hate me.

                              And the choice between coffee and rhubarb..................

                                jack is the oddball. he likes bitter. the man would cut lemons and suck the juice straight out of 'em. the more bitter, the better.
