    True, if a person is:
    - in OWL
    - has a high CCLL
    - and chooses to get only 17 net carbs from veggies

    then that particular person will not be an example of someone getting most of their net carbs from veggies. So I will re-phrase my statement:

    I love this challenge, because most of us will be living, breathing examples of people consistently getting most of their net carbs from veggies.

    I still assert that, if a person chooses to do so, they can have a CCLL of 100 net carbs and still get most of their net carbs from veggies. It is a matter of choice.

          Hi,

          Please sign me up for the veggie challenge. I will commit to the minimum of 12 NET carbs of veggies every day. I am still learning to manage Atkins properly so this should help me a lot.

          I have three different challenges going at once! I am beginning to feel that I am in control, not the food. I'm so looking forward to the day I can do the victory dance!

                    First, remember that we count net carbs. Total carbohydrates - fiber = net carbs.

                      Although I'm just on Day 3 of Induction, I would love to try this!!! It will be a great way to make sure I'm getting my veggies.....Oops...forgot to add that I am in for 12 net grams per day.

                          Just wanted to remind everyone that the Veggie Challenge starts on Monday, and it takes some planning to be successful. So tomorrow I will be going to the grocery store to get everything that I need. I will then peel/cut up some of the veggies, divide them into 1 cup portions, and put them into individual baggies so that it will be easy to grab and go. I will also spend time cooking a few dishes that I can eat off of several times.

                          For example, this is the recipe for a frittata that I will make tomorrow, so I can eat a piece for breakfast each morning:


                          ROASTED VEGETABLE FRITTATA - Serves 8

                          1 small zucchini, diced
                          1 red bellpepper, diced
                          1 yellow bellpepper, diced
                          1 red onion, peeled, diced
                          1/3 cup good olive oil
                          2 1/2 tsp sea salt; 1 tsp black pepper
                          2 garlic cloves, minced
                          1 tbsp unsalted butter
                          12 XLarge eggs
                          1 cup heavy cream
                          1/4 cup good grated parmeson cheese
                          1/3 cup chopped scallions, white and green parts (2 scallions)
                          1/2 cup good grated Gruyere cheese

                          Preheat oven to 425 degrees

                          Place the zucchini, peppers, and onions on a sheet pan. Drizzle with the olive oil and sprinkle with 1 1/2 tsp salt and 1/2 tsp black pepper. Toss well and bake for 15 minutes, add the garlic, toss with a spatula, and bake for another 15 minutes.

                          Meanwhile, beat the eggs with a whisk in a large bowl with the cream, parmesan, 1 tsp salt, and 1/2 tsp pepper.

                          When the vegetables are cooked, turn the oven down to 350 degrees.

                          In a 10-inch ovenproof omelet pan, heat the butter and saute the scallions over medium heat for 1 minute. Add the roasted vegetables to the omelet pan and toss with the scallions. Pour the egg mixture over the vegetables and cook for 2 minutes over medium-low heat. Put into oven, and bake the frittata for 20 to 30 minutes, till puffed and set in the middle. Sprinkle with the Gruyere and bake for another 3 minutes, until the cheese is just melted.

                          Good stuff!

                            This is SO GOOD!

                            Shrimp Scampi Bake



                            Prep Time: 30 Minutes
                            Cook Time: 15 Minutes
                            Ready In: 45 Minutes
                            Servings: 6

                            "This rendition of a classic dish of shrimp baked in butter, garlic, lemon juice and parsley, is even better with the help of Dijon-style mustard."
                            Ingredients:
                            1 cup butter
                            2 tablespoons prepared Dijon-style mustard
                            1 tablespoon fresh lemon juice
                            1 tablespoon chopped garlic
                            1 tablespoon chopped fresh parsley
                            2 pounds medium raw shrimp, shelled,
                            deveined, with tails attached

                            Directions:
                            1. Preheat oven to 450 degrees F (230 degrees C).
                            2. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, and parsley. When the butter melts completely, remove from heat.
                            3. Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.
                            4. Bake in preheated oven for 12 to 15 minutes or until the shrimp are pink and opaque.

                            spaghetti squash = calabash = vegetable spaghetti Notes: After it's cooked, you can dig a fork into the flesh of a spaghetti squash and pull out long yellow strands that resemble spaghetti. Though they taste like squash, the "noodles" can serve as a low-carb substitute for pasta.

                              Carole, one of the places that I like to find recipes is the allrecipes website. It's not a lowcarb site; it is a general one. So for anyone who uses it, just keep that in mind. It's a great place for all kinds of ideas. When searching out collard greens, I did see a recipe using a turkey leg. I wonder if it was the same one that you got. It sounds very good! There were other recipes for collards, too, and this is one of them:

                              Ingredients
                              • 1 bunch collard greens - rinsed, trimmed and chopped

                                I like reading the feedback provided by people who have tried the recipes at the allrecipes site.
                                This is the recipe I have Mitzi - I got mine from the Food Network website under Paula Deen's recipes. I also have one that uses turkey legs or turkey wings - the only difference is the meat from one recipe to the next. We're having ham for Mother's Day so I'm going to use the bone from that to use to cook my collard greens. It will be one of the dishes I cook for Day 1 of the challenge.
