    Mitzi - hope it's ok for me to ask before the challenge starts....I'm looking for suggestions on how to cook Collard Greens...that is going to be my "new veggie" for this challenge. I have one someone sent me using a smoked turkey leg...any other suggestions? Thanks in advance!

      Absolutely, Carole That's one of the greatest things about the challenge - new ideas! I've never eaten Collard Greens (and I live in Louisiana!). I have to admit... I've shied away from them. Maybe I'll get brave this time around and try them, too.

                      Sign me up! Still on induction probably will remain there for awhile. I need to learn to be more consistent with my veggies. Looking forward to the challenge. Monica

                      162 - 40 lbs loss - Key West Baby!
                      Still have more to go but 162 is my first goal!And I'm leaving for Key West June 30th! Totally crazy goal/but totally committed!!!

                          I'm maintenance so that would be 22 at least.

                          I'm counting induction 3 cups, plus rung 1, and 8 veggies in that 22 right? I'm asking cause I did a carb web, not ladder and did multiple rung 1 additions.

                            I'm glad that you brought this up. I leave it up to the challenger on how they want to get in their veggies. Meaning, I am just concerned with the number of net veggie carbs consumed daily. To successfully complete the challenge, all that you are required to report each day are net veggie carbs... you are not required to say how you got them, and I don't monitor how many cups it takes you to do it. I want daily numbers, and the challenger must either (1) try a veggie they have never had, or (2) try a new recipe for a veggie that you have had. That means 1 for the week - not everyday. (although, that would be cool!)

                            Having said that ~ although it is not required, most people do include details on how they get them in each day. For the five days of this challenge, I use my Fitday for veggies only. That way, I have exact numbers... I love numbers. So I will be providing all of my details, and look forward to seeing how other people do it, too.

                            I love this challenge, because we will be living, breathing examples of people consistently getting most of their net carbs from veggies. It is usually quite an eye-opener for a lot of people. They don't realize how few net veggie carbs they are actually eating. I want to encourage everyone to ask questions, share ideas, and exchange recipes. This challenge is good stuff!

                              I love veggies and like I said did multiply additions of rung one, but you do realize that only happens for inductees, OWLers below rung 3, and folk with a CCLL that is very low in premaintnenace and maintenance.

                              OWlers once they pass rung 3 would be getting the majority of their carbs from not veggie sources. since 12 from induction plus 5 from rung 1 would be 17 veggie carbs leaving 8 from induction that were not veggies plus 5 each from rungs 2 and 3 that are not veggies giving the OWLer 18 nonveggie net carbs and 17 net veggie carbs. We don't add more veggies until we hit rung 8 so that would be 4 more nonveggie rungs and one more veggie rung.

                                LOL... that kinda made my head spin.

                                All I know, is that even in Maintenance, I was getting most of my net carbs from veggies.
