      barrnone, how did you cook the jicama? I bought one but I'm not sure what to do with it.

        I've never cooked it, I like it raw. Just peel and eat.

                Okay, I'm at 23 net veggie carbs for the day and I'm tired of counting. Probably more to come....but I'm not hungry yet and I wanted to squeeze this post in before I forget! Have a great night, everyone!

                  18.6 veggie carbs for me. Had jicama, artichoke hearts, red peppers & shrooms. Pumpkin for dessert!

                        I had 18 today: green pepper, onion, lettuce, grape tomatoes, diced tomatoes, yellow squash & green beans.

                        Nyna - I cooked jimica in a small amount of water until it was soft then I added cinnamon and a little sweetner and mashed it all together like applesauce - it was pretty good that way. I've also had it raw like Dawn had hers today. I've heard where people cut it and fry it like french fries. Hope that helps!

                          Wednesday May 12: red pepper, spinach - in my breakfast omlette and creamed spinach with dinner, 1/2 an avocado, & a full cup of spaghetti squash - 18.8 net carbs.

                            Hello there, Fellow Challengers!

                            Again, I've had an extremely busy day. I am so very sorry that I haven't been a very good challenge hostess today. I PROMISE that I will be better tomorrow. I get off of work earlier on Thursdays, and will definitely be able to spend more time here. Yay!

                                today i got something called ñame. it looks like a potato on steroids. You are supposded to use it like a tater
