    14.8 veggie carbs for me today
    Broccoli
    large salad (red leaf and iceberg) with red cabbage, red bell pepper, tomato, celery and mushrooms. Includes 1/2 avo

      a note on the brussel sprouts. fresh is best. much much better than the frozen variety. i like them with butter melted over them.

        Greetings, Fellow Veggie Challengers!

        So very sorry that I've been scarce today! I've had a full day, and I'm just getting a chance to sit down with my laptop.

        Off-topic, but just have to do a little bragging. After getting off work today, this is who has been keeping me busy...



        My brand new grandson! He is 10 weeks old, and lives in North Carolina (I am in Louisiana). Big Brett (my son-in-law) was deployed to Afghanistan a few weeks ago, and Amanda and little Brett have come down for a visit. They've been in town for a week, but have been staying at the other grandparents' house. Today they moved in with us, and will be here for a few weeks. So exciting!

        OK, back to business. I'm going to read through the posts now, and will check back in a bit. Thank you all so much for participating!

          OK, I have to admit - the one time that I tried to grill eggplant, it tasted very I'm more than sure that I did something wrong. Perhaps sliced it too thickly, and didn't grill it long enough... kinda reminded me of a mildewed sponge. Any tips?

              I made my 12 again today!!! Actually, the grand total was 13.5 Once again, broccoli, cauliflower and bell peppers, but I also had a huge salad today with Romaine and cucumber!

                Caroline, it is my genuine pleasure to do it! Especially when I hear this kind of feedback.

                Some may assume that I have always been a big veggie eater, because I am so pro-veggie. But that's the thing - prior to April 2007 (the first Veggie Challenge), I rarely ate vegetables. Oh, sure... I'd have the occasional salad with iceburg lettuce. And that was about it. But when I heard about that first-ever Veggie Challenge, I joined it. I was VERY nervous about it, but I decided to give the challenge my all. I can honestly say that it changed my life. I finally stopped fighting veggies, and instead, embraced them. Instead of at the thought of veggies, I broke out of my box and started trying a lot things. I opened my mind. And it opened my world.

                  Sham, I'm glad that you liked the green beans! Green beans are something that I didn't like so much at first. But I kept experimenting with different ways of preparing them, and continued to expose myself to them. I do like them now.

                  I've read many times that toddlers need to be exposed to some foods repeatedly before they will eat them willingly. Especially vegetables. And darned if it isn't that way with me, too, on some of them. So I've learned that if you don't like something the first time that you try it, you shouldn't give up on it. There is hope.

                    Stir-fry! I haven't done that in a while... that sounds like a good idea. You've made me curious about the bok choy. Another one that I haven't tried yet. It will be cool if you can grow it.

                      Ha! I hadn't seen this yet, when I posted about trying things more than once. It is true.

                      Gotta confess, though... I'm not a big fan of leafy greans. Spinach is OK, but I don't eat many others. And I haven't made an effort to train myself to like them. I need to give it another shot. They're just too good for us, to give up on easily.

                        Yeah, sweet potatoes are so good! Another thing that I would never eat before Atkins. True, I can't have much since it is a starchy veggie. But I sure do enjoy them when I do have them.

                        Oh, this ABSOLUTELY is true! In fact, I've found that I like most veggies fresh over frozen or canned. Funny thing is, my husband prefers canned, then frozen, and only very occasionally can I talk him into trying something fresh. Gross! But I guess in his case, it's what he is used to. His mom used canned and frozen, and cooked the living daylights out of her veggies. So he likes them like mush. I like mine crisp.

                          300 g tomatoes [12.24 net carbs]

                          Snack
                          250 g frozen Brussels sprouts [10.15 net carbs]

                          Lunch
                          1 fennel bulb [9.76 net carbs]

                          Snack
                          150 g red pepper [5.84 net carbs]

                          Dinner
                          375 g frozen cauliflower [8.95 net carbs]

                          That's a total of 46.94 net carbs from vegetables.

                            I watched this recent episode of Martha Stewart on greens and it was so informative...how to correctly clean the leaves (de-stem them), cut them up easily and cook them in really tasty ways. Definitely worth checking out. The print recipes start about halfway down the page. Videos and the entire episode is available too. Just skip over the non-Atkins foods. With some of the recipes, most people will have to leave out certain ingredients (like the raisins in the swiss chard) but I have to tell you these are some tasty greens.

                            I never really knew what to do with greens other than cooking them into submission. I tried a couple of these recipes and they were delicious.

                              14.7 net carbs of vegetables today. I have yet to try a new one, I'm rather short on shopping time. I know it would help if I take the list of induction vegetables with me. Then I could be certain that what I'm picking out is ok.

                                Sorry, Mitzi! Fell asleep for good last night before posting when all I really wanted was a little nap!

                                Tuesday total was 19 net carbs from veggies! Still planning to pick up the cauliflower today after work. I need it to try a new recipe!
