    My turn. Let's see...

    Breakfast:
    250 g kohlrabi [6.5 net carbs]

    Snack:
    250 g green beans [10.63 net carbs]

    Lunch:
    95 g leeks [11.74 net carbs]
    50 g arugula [1.02 net carbs]
    100 g spinach [1.43 net carbs]

    Snack:
    250 g frozen Brussels sprouts [10.15 net carbs]

    Dinner:
    250 g pumpkin [15.05 net carbs] (I froze a few bags last autumn and wrote the raw weight on the bag, so I'm going by that)

    So, my net carbs from vegetables were 56.52 g.

        In case anyone is wondering... while avocado is technically classified as a special category food rather than an Induction veggie, I have allowed them to count towards the minimum requirements in past veggie challenges, and will do so again in this challenge.

          FRIED CABBAGE & ONIONS
          3-4 pieces bacon, chopped *
          1 pound cabbage, coarsely chopped, about 1 small head
          1 small onion, coarsely, 2 1/2 ounces
          Salt and pepper, to taste
          In a large skillet, fry the bacon until almost crisp. Add the cabbage and onions to the skillet; cook and stir until the cabbage is wilted and lightly browned. Season with salt and pepper.

            love that fried cabbage recipe.. thanks for sharing it.

            We had a power outage last night so this morning is yesterday for me and tonight will be today.

            I had for breakfast
            omlelette with mixed peppers, onions tomatoes, mushrooms, and spinach. and pumpkin butter on flax toast
            Lunch was a gumbo( onions okra corn peppers tomatoes)
            Dinner was spicey cabbage slaw and a mixed grill cause the power was out. Grilled eggplant, sweet potatoes, onions, garlic

            fitday says I had 37 net grams of veggies

              Ohh I am so proud of myself ~ I had alfalfa sprouts on my salad for lunch! Totally loved it!

              (Of course then my daughter says to me..."Cool Mom, when we get the goats [which are building a shed for], you can feed them alfalfa from the store!" HA HA.. "No Honey, they can just eat the thistles and grass outside, we are NOT planting alfalfa right now!"....Then I, in my possessive state say to her, as I am clutching my new found veggie in my tight, white-knuckled, fist..."DON'T you dare feed these to the goats!")

              Just had to share. Loving all the thoughts and the new cabbage recipe.

              Thanks Mitzi for starting this thread, it really made me step out and look beyond the romaine lettuce, cucumbers, and tomatoes!

                Daily net carbs for today was=14
                I tried a new vegetable (green beans)didn't know what to do with them I brought them frozen and steam cooked them with chicken breast with spices it was spicy and tasty!

                    I had 23 net carbs in a stir-fry that included my new veggie, bok choy plus mushrooms, chop suey veggies and pimentos. I love the bok choy and am going to try to grow some of my own.

                      19.5 net carbs today. Veggies included brussel sprouts, green peppers, celery, shrooms, tomato & stir fry of red pepper, snow peas & broccoli

                        20 for me today -- I'm counting my 1/2 avocado in that total --

                        celery, radish, broccoli, pumpkin, cucumber and turnip greens -- not really thrilled with the turnip greens but I'll have them again tomorrow to see if the taste will grow on me!

                                17.2 net carbs. Spinach, romaine, tomato, cucumber, spaghetti squash and a new vegetable- brussel sprouts. Not crazy about the sprouts, but I really like spaghetti squash. Makes me not miss sweet potatoes so much.
