      I didn't make my walking date with my friend today on account of rain, but I did get in over a mile just walking around the house, Walmart, and at a birthday party my girl were invited to today. Woo hoo. Imgaine if I really worked out today. lol. The day's not over yet.

        Erin...I will...soon...good for you for biking again!!!

        Springbreak almost over here. Took the kids to the show...Shaggy Dog...had popcorn...tasted better in my head than in real life...not that that stopped me from eating it. Took them swimming and then supper at McDonalds..I had chicken ceasar salad...no croutons and a diet coke.

              Hey everyone! The party was absolutely great! I had such a blast, I really did!!

              I will post pics when I get them. I was armed w/ the camcorder, so my Dad got the pics. As soon as I get 'em, you'll get 'em! LOL

              I had such a great time and I was so excited so many people came to see him. It was amazing. I ended up getting an angel food cake and icing it and decorating it myself. It was really cute! He LOVED it! HIs actual birthday was friday, and the party was Saturday, so he got cake twice in a row! LOL.

              I stayed completely on track, no cheats, nothing. I am really proud of myself. I didn't even make alternative desserts for myself either. His party isn't about food, so I needed to break that habit, ya know?

              I havn't weighed in a week, so I will do that tomorrow. I also got my dress for my Dad wedding. It is so beautiful, it's scandelous, too, but My soon to be step mom actually saw it and MADE me try it on! LOL> Dad loves it, so it's okay

              I will post pics in a bit, as soon as they load! Be back later, bye everyone!

                  Hi guys,

                  sorry not to check in earlier, been a rather odd few days.
                  Have managed to eat clean so I know I am losing water weight at least (feel less bloated)- but am not weighing until Thurs.

                  Have not cut out the diet coke entirely as of yet but have cut down drastically and am weaning off.

                  Have not been able to exercise as planned as have had a major allergic reaction to something - have no idea what (suspect new washing powder) - which has brought me out in large welts over the past 3 days. Have been put on anti-histamines & steroids (prednisone which blows me up in no time - aaauuuugghhhh) and am a bit deflated about the timing of it all.

                  I guess the challenge for me is NOT to reach for the comforting carbs when feeling blah physically.

                  Anyway, am really enjoying reading all of your posts, so folk are so inspiring!

                        Steph...what a hot mama you are!! can't believe the difference in the pictures. Love the new dress too! I am so proud of you for not cheating at Joey's birthday party! You go girl!!


                        catestar...hope you are feeling better soon. I like how you put the positive spin on it and noticed that you are not reaching for the comfort food! You are on your way!

                        Danny...3 days cheat free!! You are doing great. Please remember to take your measurements! There will come a time where you won't drop weight but will drop inches! I lost 2 inches around my neck alone. If you think that doesn't sound like a lot take a tape measure and measure your next. Now keep it on your neck and bring it out 2 inches (I use the mirror to do this)...see that space?? I lost that there...LOL! LOVE IT!

                        Heidi...don't you quit this challenge!!! Check in when you can! And do what you can...that is what makes you a winner!!

                        Confession time....yesterday...the neighbors sent over a bunch of leftover food after their company left...milk...kiwi...stuff like that..and 1 big chocolate bar. And you guessed it...after 7 months of being cheat free...I ate it!! And then I also had a hamburger made with 2 slices of bread last night too. I have no idea why...but I did. It scared me enough that I went to the store to stock up on the basics again. I have been seriously slacking off for awhile now...still eating legal but not healthy. So am back off the decaf coffee w/ splenda and cream. And the diet pop and back to keeping track and trying to keep my ratios more balanced. So far so good today. Weigh in is Thursday so we will see how much I have to pay for my jumping off the wagon. SIGH!!

                          Okay...here are some recipes that I tried today. They are induction friendly according to her. They come from this site. http://users3.ev1.net/~fontlady/indu...on_menu_1.html I am posting her carb counts here but recommend that you do your own as well as some of mine have come up different.

                          This one is very good. I used mozzeralla not swiss. I used a rectangle casserole dish instead. I have made this before. It froze fine for me.


                          BACON & SWISS QUICHE
                          3-4 slices bacon, chopped
                          6 eggs
                          1 cup heavy cream
                          1/2 teaspoon salt
                          8 ounces Swiss cheese, shredded


                          Fry the bacon pieces until brown and crispy; drain on paper towel. In a medium bowl, beat the eggs. Add the cream and salt; mix well. Arrange the cheese and bacon evenly in the bottom of a greased 9-10 inch glass pie plate. Pour the egg mixture over the cheese. Bake at 350º, 35-40 minutes, until a knife inserted in the center comes out clean.

                          Makes 6 servings
                          Can be frozen Per Serving: 378 Calories; 32g Fat; 19g Protein; 3g Carbohydrate; 0g Dietary Fiber; 3g Net Carbs

                          This soup is also very good! I used a bit more broth...what was left in the tetra pack. It was a bit thick as I forgot to put the lid on while it was simmering and I used a bit more than 20 oz cauliflower. YUM...might have to make this for company. It also has froze well for me.



                          CAULIFLOWER BISQUE
                          1 small cauliflower, cut into small chunks, about 20 ounces after trimming
                          1 small onion, diced or leeks, chopped, 2 1/2 ounces
                          2 tablespoons celery, finely chopped
                          2 tablespoons butter
                          3 cups chicken broth (homemade recommended)
                          1/2 cup heavy cream
                          Salt and pepper, to taste
                          2 tablespoons fresh parsley, finely chopped (dried not recommended)

                          In a 3-quart saucepan, sauté onion or leek and celery in the butter until tender. Add chopped cauliflower, a bit of salt and pepper and broth; bring to boil. Turn down heat to low; cover and simmer until cauliflower is very tender, about 20-25 minutes. Use a stick blender to puree the soup until completely smooth and thick. Add cream; mix well. Add salt and pepper, if needed. Stir in the parsley and serve.

                          Makes about 6 cups soup, or 6 big servings
                          Can be frozen Per Serving: 150 Calories; 12g Fat; 5g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

                          This one was okay...I didn't make the tartar sauce that she recommended so a little bit more tuna taste than I like. Tomorrow I might try a dab of mayo on them instead. Freezes well for me.



                          TUNA OR SALMON MUFFINS
                          2 6-ounce cans tuna or salmon, drained well
                          2 eggs
                          1/4 cup celery, chopped fine, 1 ounce
                          2 tablespoons onion, chopped fine, 1/2 ounce
                          1/4 cup green pepper, minced, 1 ounce
                          2 ounces cheddar cheese, shredded
                          Salt and pepper, to taste
                          Pinch Old Bay seasoning

                          Mix all ingredients and spoon into 6 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges.

                          Makes 6 servings
                          Can be frozen Per Serving: 109 Calories; 8g Fat; 12g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs

                              Hi everyone! I wll be around more this week - no strep throat to hold me back! I am 1/2 way through a 2 week no scales deal so I won't be posting that for a bit. I finally started the SLim in 6 tapes. Oooh, I am sore but I really like the way the tapes are laid out.

                                Thanks Steph! It was hard for me to admit that I fell off like that. After such a long time too. I am on plan today and drinking my water....got 10 cups in and 2 more to go. Very tired today...probably crashing after all that sugar. Even had an hour nap today...which is something I never do...woke up even tireder. Let me know how you like the Quiche. I will post more as the days go by if you want.
