    Hey all,

    Well, I am home. Surgery went super well. I amazed how good I feel... The dr asked me to pretend I was sick for th enex two weeks, he is afraid I will overdue it! I am going to be super careful not to overdo it. I am quite tired, but the pain is minimal.

    I wil keep you all posted. I will be logging on for short periods of time, until I beat this fatigue.

    Thank you all for your well wishes, thoughts and prayers!!!

      Aw bjs, so glad you are back and happy! Take it easy like your dr. says!

        Well... I'm back from two and a half weeks with the boyfriend and....

        I gained 5 pounds!

        I went completely off the diet. He ordered pizza. Four times. He made creme brulee for me. He took me to a fancy restaurant. We went to the movies - I ate the popcorn. We went out for ice cream.

        I'm ashamed of myself, I was doing well. Guess it's time to start over for me.

          Kittie!!! Was wondering where you went. Yep, it's time to start back...Next time, just eat the topping off the pizza, at the fancy restaurant order meat and veggies, I'm sure a low carb version of creme brulee is available if you look....Sounds like a great boyfriend though!! You've just got to get him on board with the way you eat. Glad to have you back, and don't wait one more second to jump back on board with us!

              bjs- I'm am so glad that everything went well with your surgery. It's so cute that your dr. asked you to pretend you were sick... so that means no jumping around on the couches! The fatigue will go away soon. Just rest.

              Kitty - we wondered what happened to you. I'm glad you are back. Learning how to do this around Boyfriends, holidays, friends and birthday can be rough. I had a tough time too.

              Joy - I hope you're feeling better! It sound like you had a really violent flu the last couple of days. Do you know what caused it yet?

              Silly - Is the thread officially closed now? Should we open a lose 10 pounds by Sept. 1st? I just weighed and I'm back up to 173. It's that TOM, but I also ate a piece of birthday cake and a few other things that weren't exactly on program like that baked potato on the 5th. So, now I feel sort of panicked that I'm not following program the way that I should!

                I don't mind continuing to come here for our girl chats, I thought it would dissappear after the date! this place is like home to me now and I like that we can all have our two cents here without visiting every page!

                Should we take a vote? new thread, or continue hanging out here?

                        R we serving iced lattes adn biscotti???? Virtual style???? If so I am in... between naps, I need a place to come. I did not lose or gain a pound with my surgery, so If I can now jsut kick it up and start losing I will be happy.

                        I woke up in recovery and had my sister reading my IV bag, to see if it was glucose. Sure enough Ringers solution.. Oh, and a whole lot of saltines. I didnt eat any meals, but had to eat saltines as not to vomit from pain meds. I had 2 iced lattes brought in to me. SO not too off track. Should have no problem getting back on track, still NO appetite, but will start eating helathy foods when I start.

                        Will see you all around!!

                            Okay so it turns out I only gained 2 lbs? I guess I was bloated from the plane ride and everything yesterday. That's not so bad I guess, but I'm still getting right back on it.

                            The coffee shop, that's brilliant! I wouldn't mind that at all. This challenge thread has really turned into a little gathering of sorts for us, and I know it's become a ritual for all of us to post here.

                            My next goal is 145 for September 21st, the day that my next break starts and I go back to see my family. I want their jaws to drop. That puts me at about 1.6 lbs per week which isn't unrealistic.

                            So yeah. Could've been a lot worse with everything I ate with the boyfriend. I'm glad I didn't gain it all back. But I still felt fat. He didn't really say anything about my loss, which kind of demotivated me for a bit. But I've realized that I'm not doing this for him.

                            bjs - I'm glad you're doing well after your surgery! I've been gone for awhile so I really need to catch up on things. Keep us posted!

                              Kittie, 2 pounds for having pizza twice and ice cream ain't bad at all! Did you have the best time with BF? How long till you see him again?
                              Wise young lady you are.....you are doing this for yourself, not him. AND, don't forget he's a guy......they don't notice anything! He probably just sees pretty you and that's good enough for him!

                              bjs, I wonder if there's a biscotti type recipe out there with maybe almond flour or something. I really love biscotti, especially chocolate dipped! I'm going to look around for something, I'll let you know if I find it.

                                Ok, that was easy I don't know about that Xantham stuff, but I'll look for it.

                                Low Carb Almond Biscotti


                                Low Carb Almond Biscotti

                                16 ounces sliced, blanched almonds
                                1 cup soy flour
                                1 teaspoon xanthan gum (SEE NOTE)
                                1 teaspoon salt
                                1 teaspoon baking powder
                                2 1/2 teaspoons ground cinnamon
                                1 cup cooking oil (not olive)
                                1 cup Splenda or equivalent artificial sweetener (not Equal)
                                3 large eggs
                                1 teaspoon vanilla extract
                                1 teaspoon orange extract (see note)

                                Preheat oven to 325 degrees.
                                Measure out 1 cup of almonds and set aside. In a blender (not food
                                processor), grind the rest of the almonds to make flour. Put the almond
                                flour in a bowl, and add the soy flour, salt, baking powder and
                                cinnamon.
                                Mix the dry ingredients together and set aside.
                                In a large mixing bowl, blend the oil and Splenda. Add the eggs, one
                                at a time, mixing well after each addition. Add the vanilla and orange
                                extracts, mixing well.

                                Add the dry ingredients to the oil mixture, blending well. Add the
                                reserved sliced almonds. This will make an oily soft dough. Divide
                                the dough into four sections, and form each section in a small loaf
                                approximately 2 inches wide and 1 inch high. Put the loaves on a large
                                greased cookie sheet (I lined mine with foil for easy clean up). Bake
                                at 325 degrees for about 40 minutes.
                                When the loaves are done, remove from oven, and reduce the oven's
                                temperature to 200 degrees. Take the loaves off the cookie sheet and
                                put them on a cutting board. Using a sharp knife, slice each loaf into
                                about a dozen pieces, about 1/2-3/4-inch thick. Put the slices back on
                                the cookie sheet, cut sides down.

                                When all the loaves are sliced, put the cookie sheet back in the oven
                                for 10-15 minutes. Remove, turn the slices over, and put back in the
                                oven for another 10-15 minutes.

                                Each biscotti is about 2 carbs.
                                These can be stored in an airtight container or in the freezer for
                                several weeks.

                                NOTE: Xanthan gum is a natural microbe that adds stability to mixtures.
                                Without wheat flour (and the gluten in wheat flour), these cookies come
                                out *very* crumbly. The teaspoon of xanthan gum gives the cookies a very
                                good texture - crisp without falling apart when you pick them up.
                                Xanthan
                                gum is expensive - $9.99 for an 8-ounce bag at Whole Foods - but a
                                little
                                goes a long way.
