    bjs - LC biscotti's in R coffee shop...lol. You are lucky that you did not gain during your hospital stay. When I've been in the hospital, they usually do everything they can to sabotage my LC lifestyle. I ask for a LC menu, they send pasta, cake and cookies everyday - 3 times a day. I tell them I can't eat sugar, they send more sugar, they are horrible with trying to lose weight during hospital stays.

    Silly's right, give yourself a little break here. You just got out of the hospital. Be really gentle with yourself right now.

    Kitty - Sounds like you're still doing great! The 2 pounds should go away pretty fast. It's funny how I can feel those few extra pounds. I can tell the difference in the way my size 8 pants fit right now.

    So, I've set a goal of 160 for September 15th. I was originally thinking September 1st, but, I'd have to lose close to 1.7 pounds a week to make that goal, so I changed it to September 15th. That way, I need to lose 1.36 pounds per week. I need to think about what I can do to reach this goal.

    Silly - I knew there had to be a LC biscotti, and almond at that - Yum! Thanks! That does sounds delicious!

      I love it you guys! AND I love the LC biscotti, I'm going to have to try that out!! The Xanthan can be bought at a health food store. I've been meaning to get some anyway. I think instead of the soy flour (tho I have some) I might try using the almond flour. Or, maybe hazelnut flour. We shall see.

      So, I'm off tomorrow for Winston-Salem North Carolina for a business trip. TOM still hasn't hit...watch it happen on the stupid plane ride tomorrow. Ugh.

          Went down 2 pounds today. That maybe from TOM. I wish the whole 4 pounds would go away, but I'll take the 2 pounds right now,

          Except for not eating breakfast yesterday, I had a really good day. I'll make sure to eat breakfast today - that's a sure set-up for failure!

          I've really got to get tough on myself about some type of exercising. I really think I should start the weight training with 1 pound weights!

              Not much new here. Today was a bad day pain wise. I am hoping for a better day tomorrow. I want off these narcotics ASAP, but I broke down at 4pm today and had them. Went 12 hours and said I cant stand this. I also had to go out to take son to dentist today, so perhaps did too much. My mom took us to pharmacy and to pick up a few groceries, by that time i needed to get home and rest.


              Hoping for a better day tomorrow, hope all is well with you all. Cngt wiat to get ingredients for the LC biscotti-- sounds delish!!!

              I saw somewhere yoju were making it sily-- pictures and play by play PLEASE.. I have never made biscotti, always buy it. I liek the chocolate dipped too --YUMMY!!

                Hi bjs....you should not be afraid to take those pain killers for these first few days or even weeks. That's what they're for and with them, there's no reason for you to suffer. Please! You won't be addicted, and you can still lose weight too, slower maybe, but that's okay! Didn't i remind you that you had surgery!!!!!!

                I will attempt to make the biscotti tomorrow. Of course I will post pics. What would a coffee place be without biscotti!!!!! I hope they're tasty, I could use a little tasty these days!

                  sounds good Silly--- I cant wait to see them, maybe it will kick in my appetite!!! With a nice Iced latte--mmmmmmmmmmmmmmmmmmmm....

                  Oh yeh I broke down and took the meds, I am not going to feel again like I felt today--NOWAY!!!!

                    Hi bjs - sorry you've had a bad day with the pain. I can't imagine going without the pain pills right after surgery - give yourself a little break here! Within a few days you'll be off the pain pills completely, but right now you're still healing from the surgery. I'm sure that's painful!

                    Silly, I can't wait to hear how the LC Almond biscotti turns out. I need to find my recipe for LC almond cookies as well. What would a Coffee place be without the
                    two? Yum!

                      biscotti in oven, probably had the equivalent of 1/4 cookie by eating crumbs!!!! I think the recipe carb count is way off, here's what I came up with by adding all the ingredients in fitday.

                          No, I don't deduct fiber usually but I did add it in there so if you want you can deduct .35207....big whoop!

                            Here's another one. I am assuming the recipe takes in the choc chips and optional pecans in the carb count?

                            Recipe By :nrpmonsey
                            Serving Size : 50 Preparation Time 00
                            Categories : 0-5G Low Carb Bakery Cookies-Biscuits Sweet


                            Amount Measure Ingredient -- Preparation Method
                            -------- ------------ --------------------------------
                            5 eggs
                            1 1/2 cups Splenda
                            1 tbsp baking powder
                            1 tsp cinnamon
                            1 tsp vanilla
                            1 tsp almond extract
                            1 1/2 cups oil
                            6 cups almond meal -- flour
                            chopped pecans 1 1/2 cups -- optional
                            slivered almonds 1pkg -- optional
                            semisweet LC chocolate chips 6oz -- 180g

                            Beat eggs, splenda, baking powder till thick.
                            Add cinnamon, vanilla, almond extract and mix well.
                            Slowly pour in oil while beater is going.
                            Mix in almond flour till it is a stiff dough.
                            Mix in nuts and chocolate chips If you want them.
                            Divide the dough into 4 pieces and make 4 long logs in a jelly roll pan.
                            Bake at 350°F-180°Cfor 40 minutes, take out of the oven and let cool for 10 minutes or so, then slice them as thin as you can and they don't fall apart.
                            Lay them out face down on the pan and bake for 12 minutes more to get crispy.
                            For a slightly different texture, form the dough into 4 logs, slice it when raw, then bake the cookies for 40 minutes at 350°F-180°C.

                            This is the recipie for the cookies that I sent to the Shabbaton.
                            I worked hard to develop a recipie for cookies that did not use butter or margarine or too much egg per cookie.
                            My family really likes them.

                              Recipe By :Marilyn
                              Serving Size : 30 Preparation Time 00
                              Categories : 0-5G Low Carb Bakery Cookies-Biscuits Sweet


                              Amount Measure Ingredient -- Preparation Method
                              -------- ------------ --------------------------------
                              2 cups almond meal
                              mix of almond and hazelnut is good
                              1 cup Splenda
                              1/2 cup slivered almonds -- chopped and toasted
                              3/4 tsp baking soda
                              1/4 tsp salt
                              1/2 tsp vanilla extract
                              1/4 tsp almond extract
                              2 eggs
                              1 egg white
                              Vegetable cooking spray

                              Combine first 5 ingredients in a large bowl. Combine vanilla and next 3 ingredients, add to flour mixture, stirring until well-blended (dough
                              will be dry).

                              Turn the dough out onto a lightly floured surface, and knead lightly 7 or 8 times.
                              Shape dough into a 16-inch- 400mm long roll.
                              Place roll on a baking sheet coated with cooking spray and flatten roll to 1-inch - 25mm thickness.

                              Bake at 350°F-180°C for 30 minutes. Remove roll from baking sheet to a wire rack, and let cool 10 minutes.
                              Cut roll diagonally into 30 (1/2-inch - 12mm ) slices, and place, cut sides down, on baking sheet.
                              Reduce oven temperature to 325°F-160°C, and bake 10 minutes.
                              Turn cookies over, and bake an additional 10 minutes (cookies will be slightly soft in center but will harden as they cool.)
                              Remove from baking sheet; let cool completely on wire rack. Yield: 2-1/2 dozen (serving size = 1 cookie).
                              Can melt a low carb chocolate bar and dip one end into the chocolate and then into nuts if desired.

                              These are great either way.
