        Stewed Okra

        Ingredients 1 1/2 pounds of fresh okra 2 tsp butter 1 1/2 cups finely chopped onions 8 med.sized ripe tomatoes 2 tsp.finely chopped fresh hot chilies 2 tsp. finely chopped garlic 2 tsp. salt 1/2 tsp. black pepper
        Procedure In a 10 inch skillet, melt the butter over moderate heat. Put in onions and stir frequently, cook for 5 minutes. Add and stir in the tomatoes, chilies and garlic and cover for another 5 minutes. Add the okra, salt and pepper. Reduce heat and cover simmer for 15 to 20 until okra are tender.

          4 large garlic cloves, peeled and chopped1 sprig fresh thyme1/2 cup sunflower or other vegetable oil3 pounds yuca (cassava)2 guarts water combined with 1 tablespoon salt1 cup corn oil











          1Combine the garlic, thyme, and oil. Set aside. Peel the yuca and cut it in "steak fry" 3x1/2x1/2-inch strips. Boil the salted water in a large soup pot, add the yuca, and cook for 30 minutes. Do not overcook; the yuca should have a firm texture. Drain and pat dry with paper towels. Heat the oil in a heavy skillet. Saute the yuca until golden brown. Drain on paper towels. Arrange the strips on a platter, and pour the garlic oil over the "fries."

            2 pounds beef top round, cut into thin slices1/2 tablespoon saltblack pepper to taste1/3 cup white vinegar1 cup olive oil1/2 cup manzanilla olives, sliced3 cloves garlic, peeled and chopped1 cup green bell pepper stips2 cups Spanish yellow onion slices











            1Pound the meat to tenderize it. Season with salt and pepper. Combine the vinegar and 3/4 cup of the olive oil. Add the olives and garlic; set aside. In a nonstick skillet, heat the remaining 1/4 cup of oil and saute the pepper and onion lightly. Remove the pepper and onion with a slotted spoon and set aside.2Reheat the oil remaining in the skillet until very hot and sear the beef on all sides. Return the pepper and onion to the skillet with the meat. Pour the oil-and-vinegar mixture over the meat. Cook over medium to low heat, partially covered, for 20 minutes, or until the meat is tender.

              3 tablespoons corn oil1 medium yellow onion, sliced1 red bell pepper, seeded and cut into strips1-1/2 pounds bacalao (salt codfish), cooked and shredded6 eggs, lightly beaten1 teaspoon black pepper, or to taste











              1Heat the oil in a skillet and saute the onion and bell pepper over medium heat until the onion just browns. Add the codfish and eggs and cook until the eggs are set. Season with black pepper

                1-1/2 pounds green beans, cleaned and cut into 2-inch pieces6 garlic cloves, peeled3 sweet chili peppers, seeded1/4 cup white vinegar3/4 cup olive oil1 teaspoon black pepper1/3 cup chopped black olives for garnish











                1Blanch the green beans in boiling water for 3 to 5 minutes. Drain and cool. In a mortar, crush the garlic and sweet chili peppers. Transfer them to a bowl and add the vinegar, oil, salt, and pepper. Toss the beans with the dressing. Garnish with the olives.

                  What brand of Blue Cheese Dressing do you use? I need one without the sugar, can't find one.

                    make my own found it on the internet

                    Blue Cheese Dressing
                    • 4 oz. blue cheese, crumbled
                    • 1 cup sour cream
                    • 1/4 cup mayonnaise
                    • 2 tsp. minced garlic
                    • 1 Tbsp. red wine vinegar
                    • salt and pepper to taste
                    Mix all the ingredients. Cover and refrigerate overnight or for up to one week. Taste and adjust the seasoning if necessary.

                    Total Carbs: 14.75
                    Carbs per Tablespoon: .615

                        my goal weight originally was 160 pds..but I have dropped it to 150 - 155..so I have 17 pds to go..I still have some fat i would like to lose..esp around the gut..you know the baby pouch..I mostly do cardio thats how I dropped 40 pds..I started at 207 pds..I am now 167..

                        I have to tighten some thangz up..then I will stop..so I started weights..thanks to sarah..have you seen her arms..lord..

                        I still feel chubby.

                            we need to do whatever she does..she actually has on her siggy weight lifting 101..I think I may steal her workout..also she is extremely nice and sweet..if you ask her for help she will give it without thinking twice
