    Aya - yes i am back on the wagon , thanks for asking

    Titianwasp - yes, you are right this is a crazy busy time of year! I also tend to post less when I've been bad, but this week it was just busyness.

    Sunny - I'm so sorry about your daughter. It is a lovely idea to bake a low carb version of her favourite to commemorate her.

    My report:
    - Send me to detention - I didn't do the extra credit assignment! I totally missed it until today somehow!

    Otherwise:

    - Set jaw to determined 7/7
    - Eat 25g carbs, rung 1 only - nope, ate around 30g per day and from all rungs
    - No cheats, not a nibble, nothing - no totally illegal treats 7/7
    - Exercise according to plan (5 days) - yes 5/5
    - Fitday every day - nope

    No too bad considering current form. I am pleased to have a cheat free week under my belt and this was a very scary week for me workwise so I'm glad I didn't succumb to cookies when the pressure was on, or with relief when it was over!

    This week's goals:
    - Fitday everyday
    - Exercise X4
    - 30g carbs per day
    - No cheats

    The reason I have upped my carns is because I am doing more intense exercise and 25g just leaves me hungry.

      Monday Stats Check:

      I think I did a lot better this week. Not 100%, but better. I tried a new veggie this week, sugar snap peas. They were yummy! I just steamed them and had them with salt, pepper and butter. I also tried a new recipe from Lindas website for the Extra Credit. I'll post the recipe below.



      My pledges are:


      1. I will eat under 1700 calories each day. 5/7
      2. I will exercise 4/days a week. 4/4
      3. I will eat 12+ net veggie carbs/day. 4/7
      4. I will use fitday everyday. 6/7

      5. I will not cheat. 6/7
      6. I will drink 100+ oz of water/day. 5/7
      7. I will take my multi-vitamin and my calcium supplement every day. 2/7
      8. I will post at least twice/week in Journal Stats. 2/2

      I didn't make the meatballs, I used stew meat and I also added brocolli at the end. It was delicious!

      KOREAN MEATBALLS
      2 pounds ground beef
      1/3 cup onion, minced, 1 3/4 ounces
      2 eggs
      1 teaspoon salt
      1/4 teaspoon pepper
      1 tablespoon garlic

      Mix all of the ingredients well with your hands. Shape in small balls (about 1-inch diameter) and place on an ungreased rimmed baking sheet. Bake at 425ยบ for about 10-15 minutes, until the meat is cooked through, but still tender. Rinse in a colander to remove any egg that has leaked out. Combine with the marinade and simmer in a slow cooker about 3-4 hours, stirring occasionally, or simmer, covered, on lowest setting on stove about an hour or so. These are good served with Apricot Ginger Dipping Sauce (adds about 1 carb per serving).

      Makes about 60 small meatballs
      Meatballs can be frozen without the marinade


      Per 3 meatballs: 96 Calories; 6g Fat; 8g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs
      Per 6 meatballs: 192 Calories; 13g Fat; 16g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
      Per whole batch: 1924 Calories; 125g Fat; 165g Protein; 25g Carbohydrate; 2g Dietary Fiber; 23g Net Carbs


      I made these for our family Christmas party and they were a hit. I should have doubled the recipe because they were gone within minutes.

      MARINADE
      1/2 cup plus 2 tablespoons soy sauce
      1/2 cup plus 2 tablespoons water
      1/2 cup granulated Splenda or equivalent liquid Splenda
      1/2 teaspoon pepper
      1 tablespoon garlic, minced
      2 tablespoon sesame oil
      1/4 teaspoon orange extract, optional
      1/4 cup green onions, chopped

      Mix all ingredients in a small bowl.

        Can that choc cake I posted count as my credit? Maybe not...here's a new one I found and made for the first time yesterday


        JAPANESE-STYLE SESAME GINGER DRESSING
        2 1/2 tablespoons soy sauce, preferably low sodium
        2 tablespoons sesame tahini
        1/2 tablespoon rice vinegar
        3/4 teaspoon sesame oil
        1/4 teaspoon ground ginger
        2 tablespoons water
        2 1/2 tablespoons peanut or vegetable oil
        1-2 tablespoons granular Splenda or equivalent liquid Splenda, to taste

        Whisk everything well in a small bowl. Store in the refrigerator and stir well before serving.

        Makes 1/2 cup dressing
        Do not freeze With granular Splenda:
        Per Tablespoon: 68 Calories; 7g Fat; 1g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carb
        Per 2 Tablespoons: 136 Calories; 13g Fat; 2g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2.5g Net Carbs

        I'm sad this challenge is ending (Sunny! We've all loved this! I've been wondering where YOU were this past week/weekend). I wish there was something new we could create, kind of refresh this theme but give it a new kick...any ideas? Titian?
        It's almost like we'll need extra supposrt just when the challenge is ending....

        I've been okay, cheated a bit but plugging along and trying to get my mind right. Changing my weight goals as per doc's orders was really a thing for me, still feel confused and it's led me to eat more emotionally that I should.

          Purple & Aya: I'm going to try both of those recipes. I have been playing around with a sweet and sour sauce to go over pork and have used something like both of those, using fresh grated ginger. I have copied the Korean Meatball recipe off the site, but haven't used it yet. I think that sounds delicious to use stew meat and add broccoli at the end! I still don't have any peanut oil, because I can only find it in giant gallon sizes or bigger.

          I am trying to remember the more amusing things about my daughter today, so I will be eating an entire 10-ounce box of Brussels sprouts in her honor. My daughter always loved all veggies but Brussels sprouts were her very favorite, but way down on my list of favorites. She was always a very giving and polite child, so when she was older and would cook sprouts for herself, she would always very politely offer to share with me, but the look on her face and her disingenuous smile always said to me, "Please, oh please don't want any." I pretended sometimes to mull over whether I wanted any or not, but never took any, so she would always get to eat the entire package.

          I haven't figured out a way to make her favorite main course low carb, so I won't be eating chicken and dumplings today.

            Thanks! I tweaked that recipe to make it more like the original and it turned out really good.

            This past week was mostly spent at UVA or church for what seemed like a rehearsal every day. Even though my nerve block on Friday went as it should have, I still have some really bad side effects for the first 2 to 4 days. You feel like you are gonna die before you start to get better. I had to get better so I could perform in the cantata on Sunday. I had to stand in one spot for over an hour and hold my arms extended for that time. With the RSD that I have, that's almost impossible on the very best day that I have. I stayed in bed most of Saturday and then after four hours at church on Sunday, I came home and went back to bed. Monday was another real bad day, so I had to stay in bed for most of that day because I had a rehearsal that night for the musical that I perform in next Sunday. I am committed for these performances and can't let them down.

            I agree 100%. I had intended to start another challenge after the break between Christmas and New Years. I was going to call it SLC A New Year, a New You--with a big emphasis on exercise. The problem is that there has been so little participation on this challenge and we lost over half of the challengers before it was half over. Part of our problem is trying to get healthy and slim around all our busy and hectic schedules. Let's face it, when the holidays are over, something else will be clamoring for our time. We have to learn to do it all or reorder our priorities and quit doing some of the things that take so much time and it can't be the healthy eating and exercise that we cut out.

            I know that I had way too much on my plate, what with my surgery and the disabling disorder from which I suffer, but I did everything I could to keep up. I am determined to take back my life and I will do what it takes to keep my commitments, but I'd be lying if I said it didn't make it harder for me to stay devoted to this challenge and keep my pledges when so few were keeping their pledges. It was supposed to be a sharing and learning experience.

            I am open to ideas. I am grateful for the members that are still checking in. I already had approval from Jimmy48 for the New Years challenge, and almost PMed her just this morning to tell her it wasn't going to fly.

              Quick post for now, more when my deadline is over a bit later but wanted to show you these, Sunny...

              One of the many low-carb chicken with dumplings recipes on the net.
              3 1/2 cups chicken stock (or two 14 oz. cans)
              1 1/2 cups water
              1/4 cup butter
              1/4 cup finely chopped onion
              1/4 cup finely chopped carrot
              1/2 cup finely chopped celery
              1 clove garlic, chopped
              pinch of sage (optional)
              salt and pepper to taste
              5 slices American cheese
              2 large boneless, skinless chicken breasts, cut into bite sized pieces
              1 can Ketoยฎ low-carb bread mix (remove and save the yeast pack for another recipe)
              2 eggs
              1/2 cup heavy cream
              1 cup water

              Makes 6 Servings

              Sautรฉ the veggies in butter in a heavy soup pot until beginning to soften. Add stock, water and seasonings, stir. Add the chicken and bring to a simmer. Cover and continue to simmer until the veggies are tender and the chicken is cooked through (about 20 minutes). Add the cheese slices and stir to blend as they melt.

              Mix the bread mix, water, cream and eggs into a stiff dough. Drop by spoonfuls into the simmering broth. Cover and simmer for fifteen minutes. Remove cover and continue cooking for five more minutes. Serve garnished with grated cheese.

              Total Effective Carbs for Entire Recipe: 60
              Per Serving: 10 each

              I guess finding an alternative for the breadmix may be a prob...

                        Hey everyone,

                        Just checking in Am on track with food and exercise, but fitday keeps being put to the bottom of the list...

                        Just to say I am going away from the 19th so won't have computer access - I will be true to my goals though and report when I am back on weight loss.

                        Aya - those receipes sound yum - I wish I had more time to explore these things!

                        Sunny - I think in the New Year people will be more committed to challenges; however there always seems to be a substantial drop out.

                        TitianWasp - Congrats to you! May I ask what the position is?

                          I will be a Junior Oracle Database Administrator. Any time you go to a website, or your company's HR/Finance/Production records and look for data, you are likely accessing an Oracle database. We're the ones who makes sure that you can view 6 different styles of pants to buy, or that Joe Smith's salary and vacation history show up when you request them.

                                Ha ha -not so complex. We're basically the Warehouse Supervisors, except the warehouse is full of electronic data. We get the cargo box you requested to you in a timely fashion, and we make sure no one breaks into the warehouse. Easy peasy!
