      count me in!

      I'm going to the Bahamas week of June 12. I hope to be 160#. If not, I'll settle for anything below 200. I'm about 230 now - Just finished my 2nd week of induction, not sure if I'm going on to OWL or keeping on it... I haven't made up my mind...
      I lost quickly the first week, and then I kind of stalled.

      Anyway - I'm in for the challenge! Just tell me what I gotta do!

        There's not alot to do in this challenge camera. Just weigh-in on Tuesdays and there will be 1 fun assignment per week. It's optional of course, I just wanted to do something more than a weekly weigh-in. I'm hoping vacation associated assignments will help keep us motivated. I will add you to the list ASAP. BTW, I don't know of one person who did not stall in their second week of induction. Even now I tend to lose in random whooshes instead of smoothly.

          I think my Induction went pretty well for me since this is the first time I've ever changed my eating habits to begin with. I'm happy with my results and I absolutely love the fact that this forum exists, I'd be soooo lost without it, lol.

          Cool, I'll weigh in tomorrow. The only problem I'm having is that my scale seems to be fluctuating a lot -- I decided to only weigh myself once a week on Sundays but I weighed myself today (and it was much different from yesterday - then I tried 5 hours later and it was different again - crazy) ... I think it's time I invest in a nice new scale.

            oooo i want to join!!!!

            i am going home for spring break...march 9th and i would love to be 165 (8lbs down)!!!!

            and since this board is going to be around for a while i would like to add a summer at the cape goal for mid-late june i don't know excatally what weight i would like to be but i know that i would like to look good in this.....

                ciaobella you have been added. That bikini looks great. And I also wanted to compliment you on picking a very realistic goal weight for this challenge. I tend to aim too high and then when I realize I'm not going to make it I get lazy. Also, many people who don't have as much to lose tend to still have the same goals as those of us who are larger. I'm sure you will acheive your goal in no time at all.

                  Assignment #2

                  Hmmm ensive

                  How about a couple of options? First, let's take a regional dish from our intended destinations and make them atkins friendly. Doesn't matter what rung, I suggest using the one your are at. Ciaobella, since you're going home for spring break you could try adjusting something home-cooked that you haven't had in a while. Second, if you're not an amatuer chef (I tend to be) how about some photos of your destination? At least 3. Help us and yourself really visualize the place and how you want to look and feel when you get there.

                  Remember, these assignments are not mandatory but I hope they make this challenge a bit more involved than a weekly weigh-in. I know that I need them to help prod me on to eating right and exercising regularly. And if I ever get too bossy here, YELL at me and tell me to BACK OFF!!!! I just want this to be fun.


                  Oh, and for my weigh-in, I only lost a pound. That's 208 for me. But I'm going to weigh again at my mom's house where she has a more accurate scale and subtract 2 pounds since it's at the end of the day. I really need to buy a new scale. My family keeps moving ours and I have to re-zero it every single time I use it so I know it's not reliable.

                    Playa del Carmen pics

                    My trip is actually a mission trip (VBS and construction) and I may actually be going to Cozumel, but since I still don't know I just got some pics of Playa del Carmen (although I don't think you can tell the difference). These may be huge.

                      recipe

                      Tikin Xic
                      (6 servings)

                      * 6 pieces of fish fillet (grouper or any white fish)
                      * 18 oz achiote paste (recipe immediately following)
                      * 2 whole white onions, sliced
                      * 2 whole green peppers, sliced
                      * 3 tomatoes, sliced
                      * 6 epazote sprigs
                      * 6 banana leaves.

                      Serving suggestions:

                      Add a serving of mixed, fresh vegetables on the side of each plate.

                      Marinate the fillet with achiote for about 5 minutes. Put the fillet over the banana leaf, add epazote, onion, green pepper and tomato. Wrap and put it on the grill. Cook each side for 4 minutes. Serve with vegetable on the side.

                      Achiote Paste
                      (6 servings)

                      * 11 ounces lemon juice
                      * 6 ounces achiote
                      * 3 cloves garlic, minced
                      * salt & pepper

                      Blend these ingredients together.

                      I got this from www.mayacuisine.com It seems pretty Atkins friendly already. From what I read on another site, achiote is a seed used for flavoring and epazote sprigs are an herb. I doubt that we would actually eat something like this everyday since there are always familiar options like burgers, etc. But I wouldn't pass up an Atkins friendly meal like this.

                          Hey, this sounds like a GREAT Challenge. Good Luck to you all!!!!

                          I am not joining but I do have some ideas for your fun activity:

                          1. If you could get your outfit designed by a world famous designer who would it be and what would it look like?

                          2. Create a funny/silly Atkins friendly non-alcoholic drink

                          3. Think of the ultimate spa treatment you could get using Atkins friendly ingredients (any stage of Atkins) - You know the cucumber mask, almond body scrub etc. Have fun with it.
