Just say you have a prior engagement, and if she pushes to know what it is, say it's no one she knows. Just freeze her out a bit by being uncommunicative. She probably doesn't mean to be nosy, it's just the way she is. As you say, losing your cool isn't going to do you, her, or the friendship any good.
I hate these 'invites' where you're expected to pay or buy, too. My other pet hate is antique fairs etc where they expect you to pay to get in the gate and then buy their stuff!
