I have been browsing around this board for a couple of days just seeing what's up. You guys are so inspiring it's almost scary.
So here's the deal. I tried Atkins a few years ago kinda half-heartedly and when it didn't work for me I didn't worry too much about it. It just seemed like so much work. All that figuring out what to eat, when to eat it. Going online to try to find those low carb substitutes for stuff like bread and pasta. They tasted nasty and I never lost anything. Then life got in the way, so, yeah, whatever.
Fast forward to a few days ago..I found you guys. And it dawned on me
. I was making it hard on myself. This is sooooooo easy. I realized that I don't really like carbs that much anyway. I use them to put my favorite foods between, to coat my favorite foods before frying and to hold my favorite foods for ease of eating. I never was much for cakes or cookies (ok, maybe the occassional thin mint, but come on, they rock!). I don't need to find a substitute for things I never really cared about to begin with. I am a HUGE fan of BLTs, turkey subs, chicken wings and FRIED anything. Grease is my downfall. So why not turn it to my advantage. I can fry almost ANYTHING and it's safe (and yes, I use olive oil). Chicken, turkey, more chicken, veggies, more chicken. I understand the value of moderation, and I am a fitday person. I've been keeping my calories to around 1500 a day and 65/30/5 (f/p/c), or at least pretty close.
I figure this time I'll do it right. Luckily I'm a water fanatic. I drink GALLONS of water. Ever since my son got sick a coupla years ago (Leukemia, in remission now, thanks for asking), I realized that water makes the world go round (I wish he would understand that). And I also love veggies and have a basement full of exercise equipment. My current fave is the treadmill, but with the weather getting warmer, I may actually buy a real outside bike that moves when you pedal (oooo!!).
So I want to thank all of you for the inspiration. Today is day 3 for me and I'm down almost two pounds. Scooter, you always have something nice to say. Also Joy, Jess (my younger son is named Jesse), and sillygirl (and MANY others) are appreciated by us "newbies". If I would have found you guys a few years ago, I could be 30 pounds lighter by now.

PS - The one carby food I'm going to miss-Roy Rogers Fish sandwiches. Every year during lent I would go to Roy's and get at least one every week. I took my older son to Roys last night and he told me to "go ahead, you know how much you love them." But no, I was good. He, being the skinny chemo child he is, can eat EVERYTHING and nothing shows on the scale
