    You are only allowed aged cheeses on Induction. Cheddar, Swiss, goat, mozzarella and the like (there's a list on page 125). Aging depletes the milk sugars so it has less carbs. American cheese is processed cheese food, not aged. Some of the cheaper American cheeses don't even have any milk in it.
