  • New to this board AND Atkins - Day 2!!!

    Hello everyone! I am new to Atkins and to this board but wanted to stop by and introduce myself.

    My name is Michelle and I am a 34 yr old mother of 4 and full time technical trainer/IT technician. I work with my husband of 6yrs who is the company's senior technical engineer. We are geeks to the core!

    As for my history, I have over the last two years lost over 50lbs using the typical low calorie /low fat methods. Trouble with that is how hard it is to keep the wieght off! I am a runner (which I took up after losing weight) and have run half and full marathons but even with all that activity I still manage to find a way to gain weight back. I am tired of starving and counting calories to fit into my clothing. I also want to be the same size I was in my 20's if possible. I am not sure where that will be as far as weight goes but considering my height (5'10" or so) I hope to land somewhere around 155 or 150lbs (or less in my wildest dreams). I grew up skinny as a pole and in high school weighed about 130lbs easily with no dieting, no obsessing, no thought about food at all or my body. I eat when I was hungry and since I lived at home with mom who was doing Atkins, I was not allowed to eat sugar, white flour products, dairy (though not because of Atkins), and many other things. It's when I got out on my own (got married actually) that my weight troubles began. I didn't get fat from my pregnancies. I got fat AFTER my pregnancies. I would get cravings for sugar and pasta and would eat an entire pot of spaghetti over the course of a day just because I got hungry so often. After being raised to eat when hungry, it completely confused me how I could gain 20lbs in 3 months. My naturally skinny body was gone! I wanted it back and that's what I have been searching for ever since. I think noting that I had no sugar or refined carb all my thin life sort of hit a chord in my head recently.

    I have done many diets...most recently Nutrisystem and realized that I cannot live on packaged food for the rest of my life nor should I want to. It's not natural or good for me. I need to be able to buy real food, whole food, not special "diet" food and be able to eat and exist without becoming fat. Atkins is that way I believe. I love to read and research my decisions carefully so I have also been waiting for my Dr Atkins New Diet Revolution book to arrive. It arrived yesterday. I read to chapter 7 last night with a small preview into chapter 10 so I can do the rest of my induction right. I will read it all the way through but needed a starting point.

    Now I did mention that I have been on induction for 2 days...however the last two weeks I have been reading and studying the website and slowly cutting back my carbs to gear up for induction. Considering I have only about 12lbs left to lose (started with 14 a couple weeks ago, have lost 2 over that time frame) I was considering starting out in OWL but I think I need to start myself out right and really commit to the 14 days of induction and maybe kick start my loss a little too. I have lost 2lbs the last two weeks while gradually cutting back my carbs and learning the program.

    I hope the next 12 days go as well as the last two and my activity level will continue to be high. I had some sluggishness while running when I first cut down my carbs but it seemed to go away after a couple of days. My running has actually improved since I started almost two weeks ago cutting back my carbs. It will be two weeks ago tomorrow. I am still counting yesterday as my first induction day however. I hope to lose more this way. Now I feel ready to commit to the 14 days of induction! I sort of had to "try it out" I think to understand how it would make me feel.

    Today I feel less hungry and I am enjoying not obsessing about food all the time. I forget to eat lunch and have to remind myself that I should not go that long without eating!

    My main question is, how do I do this without costing a fortune? So far what I have found is that I can do well with hamburger patties w/cheese or tuna salad and green salad for lunch, eggs and bacon or eggs and sausage w/cheese for breakfast and boiled eggs or deviled eggs for snacks as well as black olives (10-20 a day), but for dinner its tougher. I like roasted chicken or pot roast (I am making great use of my crock pot now!) but sometimes the family wants a casserole or pasta. Ugh. I end up making my own food if that's the case. I find eating out to be easier to navigate because I can order easily that way and we aren't all expected to eat the same thing. At the dinner table its tougher. I am not sure I can afford to buy steaks, and large amounts of meat for everyone! I always used to stretch the meals with vegetables and noodles. I can't always do that anymore. I have eaten around the carbs in a casserole (did that just last night) but its tough, I end up getting more food later to make up for the lack of meat in the meal (still hungry!).

    I am thinking I will buy more eggs, bacon and bulk sausage as well as tuna and whole chicken or roasts when they are on sale and store them in the freezer for later. Does anyone have any luck with low carb hot dogs or bologna? Is that an acceptable addition to my meals? I also got a meat extruder so I can make ground beef into beef jerky myself. OH well so far my family has been pretty supportive of my low carb eating and I can't expect them to shift their eating to low carb as well - I find it has to be a personal decision.

    Any tips or ideas would be very much appreciated!

    P.S. I also wanted to comment on how much change this has done for me just over the last couple of weeks! I am no longer always bloated or have swollen ankles by the end of the day (I has serious problems with edema in my legs) or after a run and not because I am eating less salt either. I always thought salt was the culprit but I am not so sure now. I feel more energy and solid constant blood sugar levels (I used to get very hypoglycemic and had to eat every 2-3 hrs). Now I can eat breakfast around 8:30am or 9 and not be hungry for lunch until after 1pm or so. That's a huge difference for me! I am much less cranky and irritable! I can't believe the difference I feel! It's so amazing. I wish I had tried this years ago. Thanks for reading my lengthy post!

    Make an Atkins friendly casserole that everyone can enjoy.

    You can buy Dreamfield's pasta ... they probably don't really need the empty carbs in white flour pasta either. Or migrate them to whole wheat.

    Well, in Chapter 11, Dr. Atkins advises against too much processed meat. I will eat a hot dog if I'm at a baseball game ... and since we go maybe twice a year ... it's not been a deal breaker for me.

    Sure you can. They don't need junk food. This is a great opportunity for everyone to learn about eating healthy.

    After all, that's what Atkins maintenance is about!

    Since you have so little to lose, you might want to move up to OWL. You need to move through OWL ... you should be at pre-maintenance with 5-10 pounds left to lose. That's pretty "now" for you.

    Also ... eating out, while quite doable on Atkins, is also filled with roadblocks.

      If you were buying Nutri-System prepackaged foods you'll find Atkins much less expensive to live on....you don't have to eat steak and large quantities of meat....I eat chicken, hamburger, roast, pork, eggs, cheese, seafood and occasionally will have a steak for special occasions.

      You should be getting most of your 20 net carbs daily during induction from vegetables -- I'd eat less lettuce and more of the other vegetables listed under the "salad" list...also make sure you eat 1 cup of veggies from the 2nd half of the vegetable list daily...there is more fiber in these veggies and will help keep your bowels moving more regularily.

      If you still want "pasta" you can eat spaghetti squash or make julienne zucchini in place of the pasta - you can also make your own spaghetti sauce so you know what is in it and leave the sugar out.

      Have you read the 2002 Dr Atkins New Diet Revolution? It's the edition of Dr Atkins books that we follow on this board. Make sure you are taking a non-iron vitamin and drinking a minimum of 64 ounces of pure water. Check Linda's recipe site - it will help keep you from eating the same thing over and over -- http://www.genaw.com/lowcarb/menus.html.

        Glad to hear you are enjoying the new way of eating. Probably quite a change from low fat/low calorie.

        You ask some good questions there.
        I try to deal with the cost problem by buying on sale or buying bulk. I use the freezer a lot.
        Also cooking a bit bigger portions of chicken and roasts are good so you can have left overs for lunch or the next supper
        My family have gradually adjusted to my eating. It was not done that easily but it has happened. I may still make them some extra carb item (potato, pasta, rice) while I just have the veggies or make a cauliflower dish. But my family actually really like my riced cauliflower and also the cauliflower bake. So I do not have to their replacements those days.

          Thanks so much J! I know about the OWL recommendation. The Atkins site said so too lol. I guess I am just too impatient. Honestly I think I have been in ketosis a while (can't confirm, don't have the test strips) because the first few days I was at 40gms/day I felt the symptoms of induction while today and yesterday...nothing...no difference. Hmmm. However I have been losing body fat - my body fat scale told me so and I am H A P P Y to see it!!! Wahoo! That means the 2lbs I lost are FAT weight and I can hardly believe that! I ran 4 miles tonight w/interval on the treadmill and felt FAST and fabulous! I can't believe how much energy I have with this WOE! So awesome!

          Thanks for the info on how to save money. I think shopping for this way of eating is actually cheaper so far than any other plan I have been on and I don't really consider this a plan...just my new way of life. I hear ya about the bologna and hot dogs (they aren't my fave) but its good to know that occasionally it wouldn't kill me. I think you're right, buying on sale is my best best. I will definitely be utilizing my freezer space! I bought a whole chicken eons ago (well not long enough it would be bad) and it was .59 cents a pound. It was like $3 and I thought, great - we'll have leftovers. Well no... have a teenage boy in the house. He gobbled up every last bit of it! I made a roast tonight and it was $5 and everyone loved it. The problem is, no leftovers! Lol. Oh well. If I get a Costco membership maybe this will work out much better to buy in bulk ahead of time. I bought a 2lb block of cheddar and told him it should last me a little over a week (4oz a day x7 days=28 oz, 4oz shy of 2lbs) and he balked at me about it. I split it out into 4oz blocks and take one to work with me each day for my cheese allotment. I add 1/2oz to my eggs in the AM, eat 2oz with my snack and sometimes the other 1/2oz goes on my lunch salad. Then I have some cheese before bed if I feel hungry. Much cheaper to buy in larger amounts and he didn't believe I would eat it all! Lol. HA! Showed him! I also buy the 18 packs of eggs or two dozen eggs but might be getting up to 3 dozen at the rate I am going. I boil 6-7 for one a day boiled/deviled and 2 each day in the morning and some for cooking/baking (like revolution rolls, those are good!). I love that I don't *have* to buy special foods. I buy real butter (tastes amazing) and cream cheese and fresh veggies. I do buy some canned veggies when they are on sale to have something fast and easy when the frozen or fresh are gone. I am getting rid of the equal in my house and switching over to just splenda (if any sweetener at all). I have SF jello w/whipping cream if I really want something at the end of the day but more often then not - since I started I actually just don't care for dessert! That's a new one! I love that I can have real heavy cream in my coffee. I only have one cup a day but it makes it soooo worth it and it tastes so good it doesn't need any sweetener at all! I thought I would miss chocolate but I don't. It's very surprising. I can't believe how different my appetite and cravings are!

          As for my family hahaha...it's not so much my family as it is my husband (uh oh) and he likes to tease me about what I am eating. *sigh* Like I like the chicken skin and some of the fat on a but of beef and he says EWWWW, why are you eating that? Won't that make you FAT??? NO!!!! I told him, if I blow up and get fatter then by all means, you can tease me but if I get smaller then leave me alone! Lol. He said he was just kidding and he's noticed I am getting smaller (I thought, already??? It's only a couple of lbs!). I took that as a compliment after all. He just likes to tease me and get me going. Silly guy. He won't part from his jolly rancher eating, bread and butter spreadin', potato hash brown ways! That's fine, he can have a carb laden side dish and eat my meaty main dish!

          Anyhoo...thanks again and I really appreciate your help! (Oh and thanks for letting me vent too lol).

            Hi Carole! Yes, I am currently reading the book now, that exact one! I just got it yesterday and I am already to chapter 10 (I read 3 more chapters after work). I love it! It's different than the older book (which is what I tried in the 90's but couldn't get past induction) and it has an entirely different tone. I loved reading about the research and studies. Very interesting to me. I can't wait to finish it. I also bought Atkins for Life but it hasn't arrived yet. I also got the cookbook to go with the new DANDR book. Some of it is too complicated for this simple cook but I will definitely be able to get some new ideas from it.

            Your idea about spaghetti squash and zucchini (and J's idea of the low carb pasta, Dreamfields I think??? I saw that on Amazon.com!) are all great ideas. I made spaghetti squash once while on Nutrisystem and it was terrible...but only because I think I undercooked it. Lol. It was a bit crunchy still. Ugh. Sort of turned me off to it for a while but I will try it again and this time make it right. I usually make my own spaghetti sauce anyways so that shouldn't be a big deal (I always have tomato sauce, tomato paste and diced tomatoes on hand) and I don't think anyone would even know if it was low carb. I will have to invest in some celery, cucumber and zucchini and maybe some squash (yellow squash if its on the list) because those are veggies I love!

            You guys are giving me such great ideas! Thanks a million!

              Make sure the list of ingredients doesn't show added sugar. Many manufacturers think tomatoes must have sugar in them.

                I have got to learn how to make "riced" cauliflower. Sounds interesting! My husband made pasta the other night with meat sauce (he was kind enough not to add any sugar or other additives that would be bad for me) and a huge bowl of cauliflower. Well I just poured the sauce (mostly meat) on my cauliflower like it was pasta! It tasted great too! I can imagine "riced" cauliflower would be good with orient or asian dishes - another favorite of my husbands...hmmm...

                I think my husband is coming around, he is stubborn! I am sure in time when he realizes I am doing this for good, he will adjust. He's already been very kind about not offering me bread or starchy things. He didn't even get mad (and he normally would have) when he cooked some sausage and potatoes w/diced tomotoes in it. I ate around the potatoes. He didn't get mad! That is a HUGE thing!!! I think he just notices how much nicer I am to live with now that my blood sugar isn't all over the place! HAHA!

                Have any of you tried the low carb baking mixes online? I am thinking of for later on...Let' see, there's the Atkins one, CarbQuick, and another couple. However I was hoping to make one of my own. I saw some recipes online for it but not sure which one will be the best. So far I am sticking with the Revolution rolls because they are easy to make and are induction friendly (I think???). However down the line I know I will miss my pancakes every so often on the weekends...any suggestions there? Again I really appreciate your input!

                I am wayyyyy too excited about all of this aren't I???

                  True about the cheese, some days I don't have more than an ounce or so other days, I have 2-3 or all 4...it does vary. I know I am not required to or anything lol. I just like it.

                  Whipped cream made with heavy whipping cream (and a little splenda), yes...and OMG its good.

                  I read chapter 11 yesterday (after I got to chapter 7), I needed to be sure I was doing it right. I saw that summer squash was there, though I am not sure if the yellow squash at my market is in fact yellow summer squash...maybe there's a label on it lol. Darn market making things difficult for me like labeling things, "squash". Not helpful! Lol. They always put it right next to the zucchini...hmmm...maybe I will have to ask the produce person next time I am there! At least the spaghetti squash has a label on it that says what it is! HA! No problem there!

                  The tomatoes...I will double-check! Good point! My mom was a real label reader, she read everything - even the ketchup bottle to see if there was sugar in it and if there was, I couldn't have it. I wish I was that vigilant now. I should be! She's really been a good example in many ways. She controls her diabetes with Atkins and lost over 80lbs. Now she is a vegetarian doing atkins so its different but she's lost more weight than ever before. I am so proud of her. Her HBP has improved too. She's closer than she's ever been to her goal and almost off medication.

                  Oh did I mention I got a meat extruder so I can make homemade beef jerky sticks without all the sugar they sometimes put in there (it was only $15 on Amazon)?? It came yesterday too. I am excited but waiting until the weekend where I will have more time to really try it out. There really are some great low carb recipes on the web!

                  Btw, do you think I really should move onto OWL? I did start out at that level...I suppose I could do it gradually like the book says...up until yesterday I just had the website to refer to for information. Hmmm, I'll have to think about it and read up on the whole thing from the actual book I think. It's helping a lot too to have input from you guys (the pros).

                    Try it without the Splenda. Whipped cream does not need to be sweetened to be yummy.

                    When you don't know for sure what something is, look it up! Wikipedia generally has pictures of foods.

                    Make sure they're Atkins friendly. Low carb does not always equal Atkins.

                      Thanks, J!!! You're right about that...at least I had decided that if I didn't know if it was acceptable I just didn't eat it. Lol. Ketchup was actually easier to ditch then I thought it would be. I ate it on everything! You're probably right about the squash...I bet its safe. Good idea on wikipedia, never thought of that! I will try the whipped cream w/o splenda - I bet you're right! I am hoping to find some flax meal next time I get to the city (Wal-mart is 65 miles away lol) because my local market doesn't have it. Bummer. I read about something called "MIM" or muffin in a minute and that uses flax meal too. It sounds really good and pancakes with it?? WOW! That sounds great too. I will check out those recipes on that site! Thanks again! What great response!

                        Heinz makes a version made with Splenda that would be acceptable on Atkins.

                        You can also make your own.

                        Flax meal and almond flour are the two things I buy from Amazon. Bob's Red Mill Golden Flax ... and then I keep it in the freezer.

                          HA! I knew it! Ketchup would be great to have again. Putting that on my list to look for at the local market or walmart next time I go (which will be tomorrow actually) if I can't find the flax meal reasonable at the store I will definitely get it from Amazon. I can also order the dreamfields low carb pastas from there too, they're not bad for price either! Great treat for the family and they hopefully won't know they are eating something better for them! I have to be sneaky with my 4yr old and 14yr old! They are stubborn about trying new things! I will still have to be careful with it though I think. Now almond flour would be great to have on hand too...can you use that in place of some flour in recipes? I would love to make cream sauces and gravies too (listen to me saying I am a simple cook but look at everything I want to try!). Please forgive me for pumping you for low carb food information! I was also just looking at how to make homemade yogurt and make it lower carb and how to make mayo - but ketchup! I will have to look that up too! HAHA. So many new things, so little time!

                            Almond "flour" is simply ground up almonds. There's no gluten in it, so it would be most difficult to substitute as "flour".

                            It wouldn't make a cream sauce or gravy.

                              The dreamfields pasta was suggested for your family -- not for you until you get high on the Rungs.....I use zucchini and spaghetti squash in place of many pastas. When you made the spaghetti squash the last time did you make it in the oven or the microwave? I like it best in the microwave -- I cut it (longways) in half & scrape the seeds out, then I put a piece of plastic wrap on the cut side and microwave it 8 to 10 minutes (until it's good and done).....then I either put butter on top and eat it that way or put my spaghetti sauce on top.

                              I made spaghetti sauce this summer with the tomatoes from our garden - I put it in 1/2 pint jars and use 1/2 of the jar with each serving. Like J said, look at the ingredients in everything you buy - not just for the carb count but also for every thing listed under "ingredients".

                              I'm a Type 2 diabetic so I agree this is a wonderful way to eat and get your health in order. Good luck to you.
