    This is great! Thanx so much for all the input, positive words, and the most yummy muffin recipe! I'm off to the store after work to track down some flax meal!

      I'm the worlds biggest fan of potatoes. I figured that if I failed this diet it would be because of not being able to eat them... But I found an AWESOME recipe on this sight...I made it...It was very easy and Lordy they tasted so awesome!!! If you love twice baked potatoes you will love these!!! My kids even loved them!!!
      I didn't use a food processer... I just used a blender..and I added the bacon & sour cream...

      Basic Fauxtatoes (substitute for mashed potatoes)
      serves 4

      4 cups cauliflower, raw (10)
      1 teaspoon salt (0)
      4 ounces grated or shredded cheese (your choice of parmesan, cheddar, etc.) (4)
      1/2 teaspoon ground pepper (0.4)
      1/4 cup heavy cream (2)
      2 tablespoons butter (0)

      Put cauliflower in a pot add water. Either steam or boil the cauliflower until very soft. Drain it very well to remove excessive water.

      Put the cooked cauliflower into a food processor and process until smooth. Return to the pot. Set over medium low heat and stir the cauliflower to remove as much water as possible. Remove from heat stir in the cheese, pepper, salt, cream and butter until well combined. Serve hot.

      Per serving (1/4 of the recipe)
      Total Carbs: 6.9 grams
      Fiber: 2.5 grams
      Net Carbs : 4.4 grams
      Cheese allowance: 1 ounce
      Cream allowance: 1 tablespoon
      Vegetables: 1 cup

      *Note: variations of this recipe are common. Some recipes add sour cream, chopped onion, bacon, different cheeses. If you add these things, you must adjust your carb count. 1 ounce of cheese = 1 carb per Dr. Atkins.

        Oh I forgot...the "Mock Hasbrowns" are GREAT too!!!

          Wow thanks kat this looks awesome.... I saw the pizza crust and that looked good too. I am feeling quite fed up today bloated and feel like I am putting on weight not losing. I know it's only day 5 but still.....

            Just want to let you know a bit of my story. I started Atkins 5 weeks ago and quit after day 3 because of my terrible headaches.. I felt just dreadful the whole time. I quit drinking Dt Mt Dew which was the main staple in my diet and switch to water only. (I saw that you drink diet coke)
            Anyway. 7 days ago I started again and I did not have the same problem at all. This time I feel great. I only regret not sticking with it 5 weeks ago. Who knows how much I would have lost by now.
            So good luck and stick with it. You will feel better eventually

              Hi, I'm new to atkins to, im in scotland. Started a week past Monday and very happy with the way it is going so far.
